Toasted Coconut Pie Recipe

This episode of Erin's Eats features my grandmother's toasted coconut pie! It's so yummy and only requires a few ingredients :)
Recipe:
3 eggs beaten
1/2 cup melted butter/margarine
1 can flaked coconut (or 1.5 cups)
1.5 cups sugar
4 tsp lemon juice
1 tsp vanilla
Combine eggs, sugar, butter, lemon, and vanilla. Stir in coconut and pour into unbaked pie shell. Bake at 350 for 40-45 minutes or until knife inserted in the center comes out clean.
