Also, it freezes well too. Let it cool, wrap with Saran and place in a gallon freezer bag. Defrost when you want it, or reheat if u like it warm. Enjoy

Beautiful pies! You could put the buttermilk in the butter to cool it, then add that mixture to the eggs. This pie is best when cold from the refrigerator. If you don’t have buttermilk, sweet milk works well, too. Margarine is only a molecule away from being plastic, use butter.

Tom Clay I cooked it on 300 degrees. If you make 3 regular pies, cook for 1 hour. If you are making 2 deep dish pies... it will take a little longer. Maybe 1 hr and 15 minutes. (Cook until set) You will love this pie. Thank you for your comments

I have made these pies for years now. Ppl love them when I make them & can't stop eating. I cut back on the sugar a half of cup or so as well. I like to take mine out a little sooner as we do not like it to get too dry & will have such a better texture, gooey just a bit. Really delicious!

Great recipe! It really does freeze well. A whole pie is too much for our household, so I froze individual slices in parchment paper over wrapped with aluminum foil. They defrost in a couple hours. Some whipping cream, a cherry and toasted coconut on top and you have a fancy presentation.

So true. It’s nice to have one in the freezer in case u have an unexpected guest or need one to take to a friend. Sometimes I reheat it in the oven for a little while. But, it’s great just like it is after it is defrosted. God bless

The Only Person In In My Family That Knew How To Bake A Coconut Pie Was My Mother's Oldest Sister. She Was From East Texas !! ( Where Are You From ) ? She Also , placed The Beautiful Tall Meringue On The Top. I Remember When I First Saw That Pie Come Out The Oven I Was Going To Love It And I Sure Did !! The Closet Thing To Heaven 🙏🏼❤😇 Where She Is Now !! Her Full Course Meals And Baking Was Always Prepared Daily Between 11:00-12;00 Noon. Anyone From The Community Could Always Come By For A Meal And Was Always Welcomed In Her Kitchen , For A Good Meal And A Dessert Always Baked. My Mother Loved Her Coconut Cakes And Pies , Actually Anything With Coconut. My Mother Just Passed This Year In February 2019 And Your Husband's Love For Your Pie And Coconut Cakes Is A Memory Of My Mother's Sweet Tooth.🤗🍰🎂 My Mother Was Like A Little Girl During The Holiday Season . She Would Have All Her Ingredients Ready To Bake Her Pineapple Coconut Cake With The Swann Cake Flour And Other Ingredients ,Which Made Her Cakes Super Moist. Mom's Major Was Math And Science/Minor Was Home Economics And Was A Great Seamtress As Well.She Taught Elementary Education 50+ yrs. And Loved Teaching ,Chikdren ,People, And Especially The Lord. She Would Tell Me Many Stories Of Her Past And Food And Clothing Was One Her Favorite Stories To Talk About. Plenty Of Food On The Table And Making Beautiful Dresses And Under Garments Using Flour Or Potato Sacks That Were Beautiful. I Know This Is About Your Gorgeous Coconut Pie , But ,The Memories Of Her Past Is Surrounded Around Your Southern Ways And Sharing Your Food To Your Church Family. I Purchased Everything For A Coconut Cake And Coconut Pies For This Holiday Season And Will Use Your Recipe. My Aunt Didn't Measure And Could Not Give Me The Recipe For Her Pies. I’m so glad to hear from you. We are in Travelers Rest South Carolina. I lost my husband on august 29this year, after 33 long days in Hospital ICU ETC. He was my very best friend and companion. We were like 2 peas in a pod. His favorite cake was pineapple coconut. When you love deeply, you grieve deeply. My older sister died this past week. Her funeral was Saturday Dec 7th. Maybe soon I can do the fresh Coconut cake on you tube. I put it together while it is still hot. Everyone seems to really enjoy it. Thank you for your sweet comments. Pie Crust Recipe 4 Cups All Purpose Flour 1 1/2 teaspoons salt Mix together Add 1 1/2 cups Crisco shortening Combine with flour mixture With hands or with dough hook of mixer until resembles cornmeal Add 1 cup of ice water (I take a cup of ice and fill cup up with water. Hold your hand over the cup and pour just the ice water into your pie crust. Stir together. Pour out on the counter and press together. Half the dough and Press down to make a round disk. Store on quart size freezer bags. You can roll out immediately or place in the refrigerator until you are ready to use it. This also freezes well for further use. Note: you can 1/2 this recipe if you so desire to

If you make 3 regular pies, there is 1 cup sugar per pie. When you make 2 deep dish pies, they are thicker, so they can b cut into smaller servings and portions out real well.

Make a note to use unsweetened coconut. With all that sugar it will be to sweet. Cooking tip bake on an aluminum sheet and it will brown bottom crust

Yes, bake this at 300 degrees For 3 regular pies cook 1 hour. For 2 deep dish pies cook 1 hr and 10 to 15 minutes or until set and golden

3 Regular Pie Crust OR 2 Deep Dish Crusts 1 1/2 sticks melted margarine OR Butter 3 Cups Sugar 8 Xtra Large Eggs 1 Cup Buttermilk 2 teaspoons Vanilla flavoring 7 ounces Angel Flake Coconut Divide equally into crusts. Preheat oven to 300 degrees For 3 reg crust pies bake for 1 hour For 2 deep dish pies bake for about 1 hour and 15 minutes

300 degrees. For 2 deep dish it will take about 1 hr and 15 min. For 3 reg pie crusts cook at 300 for 1 hr

I’ve never done that. But, pre baking the crust makes it crispy. If you try it, let us know if it works. Merry Christmas.

I saw the crusts baked 10 min at 300, but did you turn the temp up for the 60 min. with filled crusts?
