My grandmother, Meme, would make this for us during the cooler months. It's so easy to make and goes great with some cornbread or saltine crackers. You can make it either on the stove-top or slow cooker (and probably the instant pot). Let me know if y'all try it and if you also have a favorite recipe passed down from a grandma!
Vegetable Beef Soup:
beef stew meat, cut up small
1-2 cans V8 (tomato juice)
2 cans veg-all, drained
1 can diced tomatoes, with juices
1-2 cups frozen, cut okra
macaroni
salt and pepper to taste
For the slow cooker:
Place meat in slow cooker and season with salt and pepper. Cover with water or broth. Add in all other ingredients except for macaroni. Cook on low 7-8 hours or high 4 hours. One hour before serving, add in one to two handfuls of uncooked macaroni. Cover and let cook until pasta is done. Serve with some cornbread or crackers! Enjoy!
