I only just now realized why the Khajiit refer to the Dovah as "demons", or at least when that term is translated into English from Temrielic: The dragons are theologically equivalent to Abrahamic demons/devils-servants of Alduin, the fallen and rebellious servant of Alkosh. So, it makes perfect sense that the translation from Tamrielic to our languages would be "demon", as the word conveys the correct cultural context to most modern listeners.
