I absolutely love this guys gear but I can pull an amazing shot of espresso with my Rancilio Silvia that would taste as good or close enough not to matter. At this stage of the hobby, the gear is more important than the outcome imo. I would still love to have it though :)

@@Uncompletedrecall - basically a zastava will get you there but the journey is simply better with a Mercedes. And no you rancilio (huge respect as I had it before my VBM and now the GS3) cannot pull the same shot. It will be simply thinner.

Quick question to both of you Monolith grinder users. I am about to purchase my first (and hopefully last) grinder. I have saved up money to invest in the best one which I I hope I get to keep for life regardless of how many espresso machines I upgrade. Now I don’t if it is true or false but I heard that flat burrs are good for light roast and conicals for dark/medium. I tend to enjoy all types of coffee depending on the mood. Unfortunately I have money for only one monolith and I am torn on which one to invest on? Any advise? Thanks in advance! P.S: Awesome setup btw and that coffee shot looks glorious.

This man clearly has a well thought out meticulous workflow that he enjoys, but that doesn't stop dozens of you know it all bean nerds from trying to tell him how to fix what isnt broken lmao. Thank you for sharing this with us! Im trying to decide between the AV and the MP. I saw in another comment you said the AV goes straight to 9 bars, does it do even a short preinfusion like a Breville DB might? Thank you for your time and sharing your craft!

Boy, you give the proverb "the way is the goal" a rund for it's money! :) To top it all off, I would flush the group quickly to get rid of any stale water lingering over the shower screen. This place tends to be a bit nasty even on the cleanest of machines, so you would want to avoid anything that has been staying around that area for too long. Just a few mililiters, to not induce unneccesary fluctuation in the brew boiler. I would also have a question concerning the volumetric on the GS3 if you don't mind.

@@leonelsarmiento7 Yes, but I would do a little flush directly before inserting the portafilter. Just 10ml or so. At the point you actually started the shot, the water was standing in there for over one and a half minutes again, so while this seems short, in extraction times this is a lot. And since there are always some coffee grounds hanging around in there, I would flush. We are taking top 5% here of course, but given the amount of work you put into the shot, I think it's worth it. Water is your main ingredient after all. I also found the volumetric on my machine to be more exact that way also, since after longer idle times, the water might creep back a little bit, so you will get a bit of hot air before the brew water is coming out. This however might be something that is not the case on the GS3, given the saturated group.

NameNaameNameeNaamee none of that is needed in a GS3 saturated group machine! In fact, you don’t even have to flush at all.... that would apply on a HX E61 type of machine...... I just flush only to get right of any coffee particles remaining on the shower screen but not for temp reasons.

@@leonelsarmiento7 I wrote nothing of temp. I am not talking about a cooling flush. Your saturated group will not prevent coffee grounds from creeping behind the shower screen during pressure release. While commercial groups like yours and mine are much less prone to getting dirty (compared to an e61 group head), they do get dirty to a certain extent. An exception would be lever machine like the Strega or Alexa. I really had to do minimal cleaning on that one.

Hey you might want to look into the effects of keeping coffee beans in direct sunlight for extended periods of time, I don't think it's actually good for the bean + can ripen them? Just an FYI considering how expensive your setup is!

Leo,please make short comparison between Ceado E37sd and Monolith conical. It's obvious that the Monolith is a overall better looking , better build , but for me the most important thing is the taste in the cup. Does the Monolith deliver better tasting coffee ? I am considering to by a Monolith, but it’s almost 1000€ more expensive than the Ceado. Wonder is it worth this price gap?

Ivailo Alexiev not true about the price difference.. my Monolith MC3 Conical is around 2K, the Ceado E37SD is actually even more expensive, in the 2.4K range.... so it really depends what model of Monolith you want, they have 3 models, the Conical, the Flat and the MAX... the Conical is cheaper than the Ceado, the Flat is around the same as the Ceado and the MAX is a bit more than the Ceado..... also, and this is just my personal opinion the Monolith Conical (MC3) is outstanding for medium and medium-dark roasted beans, while the Flat Ceado is very good for Light roasted beans... that’s the reason as well why I am not using the Ceado as often as I do the Monolith because I mainly drink medium roasted beans... but again, just my personal opinion and experience :)

Leonel Bego Thank you very much ! Your opinion matters to me .But the price difference is exactly that Ceado ~1750€ ( 2120€ - 380€ discount), Monolith conical + Mazzer coated burrs ( VAT, Duty, shipping) ~ 2800€. Yes , the Monolith is better ,but is it 1000€ better.

Ivailo Alexiev I was just comparing the real price of the grinder, I didn’t mention VAT & Shipping because that’s very different depending where you are located.. but I see your point.... if you ask me if the price is worth it, I can only say a big YES! Worth every penny.... for example, I also have the Niche Zero (conical) that everybody i going on about it, and yes is a nice a lot cheaper grinder, but nothing comparable to the Monolith, the Monolith is way better built, is extremely precise, is like no other grinder when it comes to consistency, and the list goes on..... having said that, I am aware the Monolith is not cheap, but I have spent so much money buying different grinders that I finally found the “final” grinder and that’s the Monolith, that’s why I think In my case is worth every penny because I don’t need anything else and it will last me a whole life :) I think the important for you to decide first, is if you want a conical grinder or a flat grinder....

Thank you! Nice decision about the upgrade, I love how the GS3 looks with the walnut details. Changing the group hat takes literally 10 seconds and is done by hand! Unscrew the plastic one and screw the walnut hat, that’s all :)

Hey I received my GS3 and Mazzer Mini grinder. I spent a week to try and dial them in and now have them where I want them. I really, really like the coffee! Some days I drink 4 espressos lol!!,

Very nice video. I am pulling my hair thinking what model should i take home the manual or the volumetric. Thinking to pair the machine with an ek43s but the monolith is just amazing better not to look lol.

BsOnK1969 ha! I also had quite a few sleepless nights to be able to decide between the AV or MP model. Luckily my local shop had both models and I was able to test them side by side, at the end I went for the AV because the volumetric option works amazing, is spot on! I love it... also, and this is just my personal experience, the flow control on the MP is not great, most of the people I know they own the MP the end up turning the shots straight to 9 bars... I think if you want to go to proper “flow control” route there are better options out there.... I “upgraded” my ECM Synchronika for this GS3 AV and I couldn’t be happier, this machine is not going anywhere ;)

Leonel Bego tell me about the grinder Quality and grind consistency. I see that is smaller vs the ek43s. Also read in a few forums that differences are not that much and it can be used for espresso and pour over easily.

BsOnK1969 I can not describe in words how good this grinder is. I have owned quite a few high end grinders, this is by far the best (assuming you want to single dose of course). Extremely consistent, super easy to dial in.... I use it every single day for my espressos and also for my Chemex and no problem whatsoever.... my Ceado E37SD is inside the cabinet now (I am not using it anymore) and I am selling the Niche Zero.... also, is probably the quietest grinder I have seen. Incredible.... mine is the Conical (MC3), so you can not compare it to ek43s because that one has flat burrs... you need to compare it to Monolith Flat or Monolith MAX

Leonel Bego yes. Single dose for home use is the best. Two more question. I do lots of single origin, how does the grinder handle grind for pour over? And where did you get the single dosing tubes? Caps looks like they something like RO. Awesome setup

(Better to see UNDER PF) How do you like grinder? Why did you prefer conical vs. flat? What beans? Roast? Dose? How was extraction? How do you like GS3? How much and when do you use its “profiling” abilities? Why did you pick GS3 over Mini? Are you happy overall with your gear? Just seeing uncommented espresso pours is useless. They all look the same, assuming you have technique down. BTW what purpose does the multiple twirls with the palm tamper serve? Just curious.

Laurence Goldman Your comment «just seeing uncommented espresso pours is useless” is quite rude to be honest. And on top of that you ask a million questions. Questions like “How do you like the GS3 or Why did you pick GS3 over mini” are questions to be asked on a review video or forum and my video is not that.. or then at least ask in a friendly manner if you would like to hear or get opinions ;) …. There are tons of professional videos and forums out there where you can find those answers…. My video and youtube channel is not professional whatsoever and my intention was only to share my workflow, no more no less…. But to answer just a couple of your questions: - How do you like the grinder: I like it very much, best I ever had - Why conical over flat: when buying my Kafatek grinder, they recommended to me to get the conical over the flat because are supposed to perform better for medium-dark roasted beans, and that’s what I drink the most - “Profiling” abilities: My GS3 is the AV model, so not really a profiling machine. - Why GS3 over Mini: Purely on personal preference. Both machines are good.

Leonel Bego Thank you for reply. Please take my comment constructively.I am passionate about espresso. I do find it useless to show equipment pours with no commentary. What’s the purpose? Please explain? If I can push posters into an niche where they have something personal and unique to offer. Something with depth and point of view, everyone learns and benefits. It doesn’t have to be “professional”. Insight and explanation of your favorite beans and roasts. Their taste profiles. How you’ve come to prepare them would be interesting. Anything you’re passionate and interested in. I’d be interested to hear how your single dosing cylinders is working for you. I’d be interested in your opinions about the non-profiling GS3: the importance of the saturated group over more common E61 or heated groups like Breville DB or Decent. (Can they ever match the total mouthfeel of an A machine set-up?) With all the hype, I’m beginning to come around to the value of your set-up. Really, best shop quality at home. And keeping it simple with similar type of beans and roasts. So sorry, if I seemed to offend, but please consider the intent of what I’m suggesting as positive.

Great workflow. One question: any reason why you don't grind directly into the portafilter (with funnel in place)?

digliyou thank you :) I could grind directly into the portafilter but I prefer at the time I’m grinding I’m then cleaning the portafilter and preparing the rest :) but I guess there is no any advantage or disadvantages doing it one way or the other, just personal preference :)

Also have you found that WDT makes a significant difference? I ask because let’s say I have to make several drinks for company is that a step that I could omit? Also what is that device behind your bean cellars?

Hi Shawn :) thank you for the comment! input was 18gms and 35gms output at about 30 seconds. The taste wasn't great, so now I dialed in to 18gms input to 39gms output at 26 seconds and the flavour is amazing! :)

@@shawnsgear Doing WDT is basically to distribute better the coffee in the basket, meaning you will reduce channelling and in result a better and even extraction! Having said that, you could also tap your portafilter against your kitchen top or so and if you have a good tamping technique then it could be a step you can omit. Have you ever tried to make coffee with a bottomless portafilter? if not, then I highly encourage you to try it, is the only way to see if your tamping technique is good or if it needs some improvement. If your tamping/distribution is not great, with a bottomless portafilter while extracting the coffee you will see the channeling and you will have a mess all around ;) if you the extraction comes nicely then your technique is good.... but again, if you have some friends visiting and they are not like super ultra dupper coffee snobs, then just omit it.. grind, tamp and enjoy the coffee with good company :) Oh and the device behind the bean cellars is a radio ;)

@@leonelsarmiento7 Hey man! I apologize. I was actually asking about RDT and not WDT. Sometimes I will confuse those two acronyms by typing the wrong one. I definitely do have a bottomless PF though! I use the Londinium Distribution Tool, Decent Funnel, Decent Tamping Cradle, and Decent grooved Tamper. Sometimes I will use the LW Blind Shaker too. So did you use RDT with your Niche as well? About the Radio what is the brand and is that what you used for your music in the video?

They are from Weber workshops and are called glass bean cellars. They are quite expensive, but they also offer commercial plastic ones for better price.

jake park define better? If we are talking about built quality, I think both are high end machines and they are amazing! I don’t think you will get “better” tasting espressos from the GS3 over the Synchronika! But obviously in the GS3 you have all the functionality that you don’t have on the Synchronika! Having said that, if you are into Latte Art I would then recommend GS3 over Synchronika due to the steamer is much much powerful. Otherwise I don’t think one is better than the other, they are just different but both amazing machines, you can’t be wrong with any of these two.

Jean Mai hi, that’s a funnel. It makes it a lot easier to pour the coffee into the basket and then use the distribution tool with no mess... is a simple piece of equipment but one of my favorites

When I saw you got the Mononlith Conical in November, I thought " Wow, that seemed easy to get the Monolith", knowing that getting one is like winning the lottery. And you know what, I managed to get snag the MAX at the last run. And here I am asking you about the Tidaka. What are the odds? Thank you sir!

Jim Diet that holder came together with another grinder I had before. But is just a piece of plastic. Whatever fits to slide inside the forks in the grinder could work to hold the dosing cup.

Martin Cubaynes my machine before this GS3 was the ECM Synchronika, the Synchronika is already a high end machine, is an amazing coffee machine and the GS3 won’t make “better” espressos.... so, in reality you don’t need to upgrade unless you want the extra functions the GS3 has, but as I said, the GS3 won’t make you a better coffee...

Hi :) well, I think here we are in case of "you get what you paid for". I have the Niche Zero as well, and is a nice little grinder and it performs well. On that price range the Niche zero is great and I think is probably the only Single Dose grinder on the market at that price. My personal experience is, and maybe others will tell you differently therefore is just my opinion, that the Niche Zero performs well only for espressos (fine settings), I have tried the Niche for coarser settings for my Chemex and is a disaster, it grinds very inconsisent, some very fine particles and some very coarse particles. Having said that, for espressos it performs well, and the retention is very low. So, if my budget would be on that area I would buy the Niche Zero (taking in consideration you like to single dose, otherwise, this is not the grinder for you)... Now about KafaTek, this is another beast, this grinder is built to last, is the most consistent grinder I have ever tried (and believe me, I have tried and owned quite a few high end grinders), it doesnt matter if very fine or coarser settings, it grinds PERFECT! Each KafaTek grinder is hand built and hand tested in Seattle, US. is a "one man show" company and he will only shipped the grinder to you if everything is working as it should, so you will never get a "defect" monolith grinder. When you get the grinder, you get a "report sheet" with the tests results he ran before sending the grinder to you, meaning each grinder is tested individually and can be sure that you are getting the best of the best. The grinder has the most perfect burrs alignments!

Which grinder is your second best for single dosing , because the price for KafaTek here in Europe (VAT , shipping, duty) is ridiculous . You obviously have expertise , and I will be very grateful for your advise !

@@bgtron11 yeah, unfortunately they are very expensive, I live in Switzerland and on top you have to count for the shipping and VAT as you said! I think you should keep the Niche Zero, is a very good Single Dose grinder! To get a "higher" up Single Dose then you have to spend much more and then I would do with Kafatek otherwise keep the Niche Zero, is honestly a very good Single Dose grinder for the price... if I may ask, why I are you looking for another grinder? not happy with the Niche Zero?

Nikolai Todorov that is true, the popcorning on the Niche is quite intense! I have seen some people twitching something on the top of the burrs to avoid popcorn! There are some videos on KZbin if you research!

If this helps my set up is worth approx £2500 which sounds a lot but in the past 7 years I have saved much more than that as no longe spend £2.50for a shop bought coffee an I can make much nicer coffee than Starbucks etc so to me it was totally worth it

Ian Skelly I’m a broke college student so I had to quit my coffee addiction to avoid a situation were I spend 1000$ on a grinder, 5000$ on a expresso machine, and 15$ a week for a pound of specialized coffee from my local roster. Made the math and by just not buying the coffee beans I save over 800$ a year... imagine, multiply that times 4, 3200$ I could have saved to buy gas or Invest in stocks or something.... coffee addiction is really a waste of money unless you’re rich

Not to judge but it looks like you've gotten every piece of kit and added every trending method you know, and thrown them all together without much of a reason. I sincerely hoped pulling espresso was becoming more grounded, and less flash.

All those rituals and still you have channeling. That shot blonded in less than 10 seconds. Nice setup but try to focus more on getting consistent pulls.
