After the Civil War there were no jobs. The soldiers rode trains and carried a hoe, trying to find work. They became known as Hobos (hoe boys). They would see farms and jump off the train to see if they needed help. If there were no jobs, they would raid the garden. Get a head of cabbage, onion and raid the chicken coop for eggs. They cooked their meal in anything they could find. I’ve cooked this “Hobo dinner “ for years. Reminds me of the Hobos that still rode the rails in the 1940’s.

Get a slow cooker or air fryer to have your meals ready when you get home or meal prep on the weekend so all you have to do is heat up. Eating that late at night can never be healthy.
