I have utensils brought over from India by my husband's family when they first visited in 1987, kadhai (two); spoons for dahl and rice, and last year I picked up a proper Indian-made tava in my local Indian shop for €9.99! My MIL and SIL taught me the basics of Indian cooking, and your recipes have brought it to another level.

I have a kadai pan and a tawa,spice grinder ,pestel and mortar. No pressure cooker...a little bit scared of them. Yesterday i made for the 1st time ever Kami kebab and pudina chutney. Sometimes i cook BIR restaurant food ( British indian restaurant food) So this was an amazing new experiance. Had to make Chaat masala for the Pudina from scratch using a new spice " Kala namak...Wow its rearly smelly,but the flavour is amazing. LOVE YOU AND YOUR CHANNEL.❤🎉❤🎉

I agree completely Bumbi, everything you’ve recommended is very useful. I have an Instant Pot and i cannot live without it - I use it to make almost everything. In my opinion, it’s the best investment ever. Oh and pls say hello to Bo for me😉 so adorable with his curious nature.

I love my instant pot, it's so versatile, I use it for dals, beans, chick peas, slow cooking chutneys, sometimes a curry, and fermenting idli / dosa batter, one of the most used appliances in my kitchen.

Question: Do you use the same batter recipe for idlis and dosa.? I make one batter that is nice and creamy for idlis then thin the same batter with water for dosa, Reason I ask is my son loves idlis and my wife loves dosa masala so should I be making two different batters with different dal/rice ratios? Currently I'm doing a 3 cups rice to 1 cup urad dal any advice and insights would be most welcome. Oh, and do you adjust your temp on the yoghurt setting or just go with the yoghurt and for how long ? (Oh dear that's a lot more than one question, sorry 😁) 🙏​@@CurriesWithBumbi

@BoggWeasel I do one batter for both idli/dosa, just like you do. Pressing on yogurt function , I skip the pasteurize step and go to the next step after that.

@@CurriesWithBumbi Thank you so much for such a quick reply, there are so many variations about ratios of rice to dal, salt before or salt after fermentation, set the pot ton 87 degs for best fermentation etc etc, I have nearly a dozen recipes on my clipboard and no two are exactly the same. It's almost like a science experiment, but an enjoyable and tasty one (Most times the idlis turn out nice and fluffy but I have made some rather bouncy ones 😁)

That's a good point about the pressure cooker saving fuel. I have a big one for canning but have been putting off buying an Instapot.....maybe I will buy one.

I have a large blender, but I bought the little jars which are perfect for small amounts. And I have coffee grinders for savory spices and one for sweet spices. So I never get chilis in my cinnamon and nutmeg. And a flat bottom wok-like pan is a wonder. And wok tools are absolutely necessary. Great list!

I finally bought a second coffee grinder this year for dedicated spice use. Some spices come out great in coffee - you'd be surprised how nice the background flavor of coriander is!

Thanks Bumbi. Very useful. There is a spice, Cardamom, that is actually great with coffee. You can buy Turkish/Greek/Arabic ground coffee with cardamom anywhere. My friend’s old Egyptian father in California makes it and I’ve had it flown to me in UK

Cardamom is fine but smell of cumin/coriander/red chillies won’t be that good in a coffee for me but tastes vary from individual to individual 😀

I have about 95 percent of your daily essentials for cooking Indian food yea😊 the flat stainless steel you use to help you stir in your pot in Gujarati it’s called Talato . I have three of them a mini one and 2 large ones as you show in the video .Happy Early Thanksgiving to you and your viewers !

Love the if you don’t have this, you could use this instead suggestions. Personally, I do use the same spice grinder for coffee, but mine also has a removable bowl that goes in the dishwasher.

Useful to know the must have utensils in Indian kitchen. I can simplify your list and say that we get blenders with choice of 3 or 4 jars of different sizes which take care of dry and wet grinding, small and large quantities. I grind pasts as well as spice powders in these. You will need a coffee grinder only if you toast and grind coffee beans yourself. If buying ready coffee powder we don5 need one. I use medium sized kadais with flat bottom which serve all roasting, frying and tadka...just avoiding too many items, but if we like separate things for each function why not? I agree that a simple pressure cooker is essential but if instapot is safer there, then that’s better. No need for both. I think it would be necessary to add flat board (is it chakli in Hindi?) or silicone sheet with belan for rolling rotis or chapathis, along with a flat tawa. A slotted ladle is also necessary for deep fried cooking. Coming from south India no kitchen here is complete without a dosa tawa (separate from the one for roti / chapathi) and an idli stand 😀. Likewise, depending on where we are from in India the list of “essentials” would vary a bit.

Actually it is very hard to get Indian style blenders here in USA. I tried multiple blenders and have now narrowed down to using a particular one for wet grinding and a separate one for dry grinding. If you are living in USA, I would love to know which blenders you are referring to.

@@CurriesWithBumbi I don't. But my daughters live in Uk and US. They take blenders from here and use an adapter my friends children also do that. I can check with my friends children who all use Indian blenders and let you know. It may help those interested in Indian cooking.

So I did some asking around and also Google. Apparently now Preeti Blue Leaf blender is easily available in the US and comes with multiple jars in different sizes. Cost is around 115 US$. It is reported that it is very popular among Indians living in the US.

My friend once bought it and was extremely dissatisfied by the customer service. She had problems with it but customer service was horrible. Better to buy products that can be easily returned or with an easy to reach customer service. How can I refer products to my viewers that may be a hassle later on. Thanks for all that information though. The blender I use is really very good and I am very happy with it.

@@CurriesWithBumbi I agree that we should suggest only good lroducts. I checked with three of my friends who are using Preeti and are very happy. Two have bought in US, and one has written that she could.buy Preeti blender in Bangalore, but made for US with 110 V. I don't use Preeti as I don't like its look. But I don't know about its performance. Reviews are good though. Just sharing info that's all...

You can use a teaspoon of dry fenugreek leaves at the end but next time when you get hold of fresh methi, I would highly request you to try another time

Greetings, Bumbi! You've sold me on getting a pressure cooker. May I ask what size your Instant Pot is? I see them on Amazon in 3, 6, and 8 quarts, but I don't want too large of one. Is a 3 quart big enough for not just dal but stews? Or should I go a size up? Thank you!

I have both 3 quart and 6 quart. I use the 3 quart one the most. It depends on the quantity you want to make. If you want to make in bulk then 6 quart is good. I would say if you buy the 6 quart it will serve both the purposes of making less or more. The insert is not heavy at all but does take up a little counter space.

@@CurriesWithBumbi I went with the 6 quart, since I can use it for stews as well. Another question: Since I've never used an InstaPot before, does making a double recipe equal double cooking time? For instance, if a recipe calls for 1/2 cup split moong dal and 2 cups of water to cook for 8 minutes, does a double recipe (i.e. 1 cup moong, 4 cups water) need to cook for 16 minutes? Thank you! 🙏

Good you are buying the 6 quart. The time remains unchanged regardless of the amount. I always add 2 mins more of standard pressure cooking time when it comes to Instant Pot.
