What an experience! I recently discovered Esther Choi (through Uncle Roger, who I also discovered recently lol) and I'm loving all her content and skills as a chef, her being just natural and her "zero-waste" cooking tips. With that said, I MUST try Jon's habanero-limequat salsa!!! What a way to represent SoCal Chinese food. As someone who loves spicy food and grew up with a love for incredible Tijuana-Chinese food (and Mexicali-Chinese) in a half Mexican-half Chinese neighborhood, I NEED to try all these places in San Gabriel Valley! Thank you for this content!

My family hails from both the East and West sides of the world. Filipino and Thai parts of the family have given me a resistance to the heat. I can't believe Esther's friends here couldn't handle the heat that well. I need to check some of these places out if I make it back to California.

Depends on where you're from and what you were raised on. Chef Yao is Taiwanese and Chef Mei Lin is from Guangdong. Neither place is known for super spicy food. If either of them were from, say, Chongqing and couldn't handle the heat, then that would've been surprising.

I don't think you understand that she puts half the content of a jar of one of the hottest pepper in the world in their bowl; nobody on the planet can eat a whole dish like that; and one bite is just for the ridiculous challenge but it's impossibly hot as well. From the video they can handle hot food pretty well.

I grew peppers of all kinds in Tucson. I had to give my hot sauces to my boys. I hurt myself. I remember sweating on the bathroom floor, swearing to God I'd never eat them again. I lied. Esther, the Morning Star. I love these videos. Please keep them coming.

I live in the SGV and there are SOOOO many good places to get nice spicy food with one of the, if not THE, best places for Szechuan is in Monterey Park (Xiang La Hui). I had to laugh at Esther when she inhaled during the noodle slurp. I have done that quite a few time and know better. Takes a few minutes to recovery all the while coughing and eyes watering.

dat sechu style o kitchen is already on the edge. Had this beef stew with elefant ear shrooms ina sea of peppers and peppercorn. Couldnt sleep for 3 days in a row so activated. my wife told me to stay away from her after the first night heheheh

I've been to Hunan, and I've been to Chili King. It tastes very close to the real thing. Love the preserved pork with chili 😋 Lu's garden is the last place I would go searching for spicy. Anything southern Chinese (most Chinese food in the US) is sweet, salty, and paired with rice. The middle parts of China from Beijing to Hunan to Sichuan to Xian. That's where all of the best, most flavorful, and yes, spicy Chinese food comes from. Noodles, chilies, oil, peppercorn, cumin. Unfortunately, the good stuff is hard to find outside of the SGV.

I used to carry a bottle of scorpion powder with me to add to food but I stopped because I had maced myself so many times after. I started carrying gloves also to avoid it. Just had to quit carrying because I rub my face too often because of allergies! Love the heat, hate the aftermath!😂
