I just finished watching this beautifully filmed video. It took me three or four sittings to watch it entirely. I am glad I did. Not only is it beautifully shot, but relaxing and educational. I hope you and Pepe, Aspen and Lolita have a lovely Christmas. The New Year promises to include you finishing your lovely home and moving in. The mystique of life in your small temporary cabin can never be forgotten by us viewers. Behind the scenes, of course, there were many challenges that you both faced and conquered! I found myself wishing I could be there just to learn "in person" the valuable things I learned by just watching. Gardening, harvesting to table cooking and, of course, building a lovely and sustainable home when watching Pepe's videos. I love LOVE your content. Your recipes always brings a nostalgic feeling. I was vegan in my 20’s, but after almost 10 years I had to drastically changed my diet to a very low carb one. I did not know back then the damages a high carb diet can do to our bodies. I suffered from migraines for yeeeears, digestive/gut issues, depression, ovarian cysts, fatigue, inflammation yata yata. The harder for me are nuts, I love seeds/nuts so much, but if I eat a bit more than a handful of almonds/peanuts, I get super inflamed. Now I just listen and observe my body and just go with the veg/fruits that agree with me. 🫶
