What about the Wii System Transfer (only available using the Wii U's backward compatibility)

That one is actually a bit different; the wii system transfer shortcut uses title type 00010002 (used by builtin stuff like wii shop channel and photo channel) instead of 00010001 (used by stuff from the wii shop, like wiiware and even the real wii system transfer app). I don't actually have a Wii U, but from what I've seen online, downloading the real wii system transfer adds a second channel alongside the shortcut (because they have different title IDs), and the shortcut can't be deleted (since type 00010002 can't be deleted). That said, it also might vary between consoles, since the shortcut channel itself isn't on the update server.

You can't unless maybe you download the HomeBrew channel even then the services for said channels is shutdown. And you get the Wad file if I'm not mistaken.

Every disc has an "update partition" that contains the update required by the disc, which the Wii installs if needed. This is how newer Wii discs can be played, even when the Wii is not connected to the internet. According to WiiBrew, Just Dance 2014's update partition has these demo channels in it. You can get these channels by inserting Just Dance 2014 into your Wii, or by dumping the WADs from the update partition itself. WiiBrew's update partition list is highly incomplete; there are probably many more discs that have these channels in their update partitions, but Just Dance 2014 is the only one I know about.
