I'm from Brasil, and we use a LOT of rice, like in a everyday basis. The principal type is like your 1st shown, the "Carolina" (?) rice (here is called "Type 1"). Not only rinsing, but before cooking, we do a pré-frying with oil (canola/corn - not soy), salt and mashed garlic until the rice grain has it's center whitened. THEN we pour the boiling water (2 water cups/ rice cup) and then 20 minutes or so of cooking, it's ready. Try it out some time! 😃

when i cook rice i put my hand (clean) over the rice and add water until it covers my fingers, it always works for me. If you leave the pot close when the rice its done the rice will ¨steam¨ and get very fluffy :D

saute equal parts of grated ginger and garlic in oil, then mix the ginger mix into the rice and water before cooking, that will make the rice really fragrant and goes with chicken really well

Over the past 25 years, I’ve made different rice varieties using several cooking methods, but my favorite will always be how my mother made it when I grew up. She only used Uncle Ben’s converted rice, boiled on the stove, with Wyler’s chicken or beef bouillon cubes (I prefer beef), butter (actually, she used margarine), garlic powder, and ground black pepper. It’s delicious.

I was turned off to rice while growing up and did not eat any more until I went to Thailand during the Vietnam War. After being coerced into trying some fried rice in Bangkok, I became hooked on it and have been eating it since then. Rice is eaten more than any other vegetable around the world with potatoes being in second place.

Could you please do a video about using Candy/Fry Thermometers? I don’t know where to put the prob. Of the bottom, halfway up the side or in the center. Also another burning question. When you proof bread, what is considered “room temperature”? My kitchen in the winter is usually around 68. My bread takes twice as long to proof and the recipe says! For candy thermometers, I've always tried getting the probe into the middle of the liquid, avoiding touching the bottom of the pan so that it doesn't get a false reading. And I believe room temp is considered about mid 70s F

I think you should have addressed the arsenic issue for anyone who eats rice frequently. Rice has to be thoroughly washed due to arsenic in the soil in which it is grown. Brown, red and black rice have more exposure to arsenic because the hull is still on the rice. In the US, white Basmati has the least exposure to arsenic.

If you toasted the rice with neutral oil befor adding the water the rice will become less sticky and more fluffy.

What happens to cause the rice to be more fluffy when you start by toasting it? Rinsing adds water and toasting takes it away. Very confusing.

@@annemorrison3564 Rinsing isn't meant to add water, it's just to wash away the starch that makes it clumpy and sticky. Toasting is for added flavor, but there's not much difference in texture if you don't toast it.

Very informative. I lived in India so cook lots of dahl and rice using Jasmine rice in rice cooker. No salt. Also, when rinsing the rice- we really scrub it together to get all that rice dust off.

I will push back on the rice cooker comment. Almost everyone in Louisiana (if not the majority of the south) has a rice cooker in their home. But we tend to eat A LOT of rice dishes XD. That's our main meal it seems. Gumbo, Rice and Gravy, Jambalaya, Stew, etc.

I hope you don't mind me answering. The plant is actually not rice, but rather an aquatic grass that produces grain, like wheat or barley. Wild rice grows best in shallow, clay-bottomed lakes, approximately three feet in depth. The seeds ripen in late summer, between mid-August and early September. It's harvested the same now as for hundreds of years. The harvesters are mostly indigenous people as most is grown on their land. They bend the stalks into a canoe and beat them with wooden rods to release the mature grains. It doesn't harm the plant, so it's a very sustainable grain. You cook it basically the same as regular rice, or you can mix it with other grains or rices. It is very, very flavourful, tastes nutty and takes 45 minutes to an hour to cook. It's expensive for sure but it's sooo good. Again I hope it was ok to answer Jenn 💖 in Canada 🍁

Being latina, I grow up eating rice with every single meal, i own a rice cooker and I use basmati rice with a little bit of vegetable oil, salt, granulated garlic and granulated onion. My husband is from USA and he ask everyday for rice in each meal.

Back in 90's I remember I would eat rice with rice when there's no viand to partner with rice. My mom would shape the rice into quail eggs and I would pretend they're eggs and eat them with rice. Lit rice on rice.

Most in the west... Please... I have a Tiger MICOM rice cooker. Yes it's expensive, but when I want everyday rice it's just as functional as when I make sushi rice for sushi or gimbap... Not to mention makes hella good rice porridge. And it will keep it warm for hours on end without on end as well when you have guests over who may want a second helping... Not everyone here in the west is stuck to just eating meat and potatoes...

I have two rice cookers too! I have a cheap one that I use instead of a slow cooker, and a zojirushi that I use daily. We’re big rice eaters, so a rice cooker is a must have appliance for me. I think it just depends on where you live though. I’d be willing to bet most households in N/S Carolina, Louisiana, and Hawaii have rice cookers.

I have a panasonic rice cooker. The rice at the bottom always gets overcooked. It is great for oatmeal and steamed vegetables but sucks as a rice cooker.

It gets overcooked because you're not using enough water or you use the quick cooking function which I find tend to scorch the rice at the bottom. If you bought a rice cooker, it should come with a plastic cup. The cup is for you to add just the right amount of water. Pour rice into the rice pot until the line 1 at the side of pot, wash well, then add 1 cup (using the provided cup) of water and cook in rice cooker.

Whenever I make long grain rice the bottom of the pot still has a little bit extra water and the rice is too sticky. But I still follow the instructions on the bag very precisely. I tried one time to let the rice soak in cold water and then drain it, but it still never has worked. Any advise?

You're using too much water. When you want drier rice (when eating with dishes that has lots of gravy), use lesser water.

#kitchenconundrums after adding the rice to the water, put a tbsp of oil and cook it on high flame till the water can be barely seen and then reduce the flame to a low simmer and cook it covered till the water is absorbed completely. It is the best way to cook it so that it is fluffed up beautifully and doesn't stick to each other.

In India we consume rice almost everyday..I had seen all ur videos .. but this one disappointed me.. the rice was not cooked properly..it was sticky.. you can try to use lil more water than u used in this video..and without giving it a standby after pulling it out of the head drain the excess water with this will let ur rice look more beautiful, whn u let the water sit in for long time in rice..it becomes sticky .. plz don’t do that.. u can also use 1 spoon of lemon juice to get that beautiful white colour and the grains get look more fluffy
