I have made that dessert before using French Vanilla Instant Pudding. I am sure it is much better with your homemade pudding. It is an amazing recipe that everyone loves. It is great frozen too! I always freeze the leftovers and it last quite a long time in the freezer.

I save my egg whites and freeze them in small containers. Great to use for breading fish, meats or veggies, it's a light glue compared to regular beaten eggs.

Sudden question. Is it possible to like toast raw flour beforehand and then do whatever with them and not having to worry of uncooked flour? Or how about boiling the flour in milk so that theres more room for error

It should be refrigerated. The graham crackers absorb some of the moisture from the custard so it “sets”. Basically this is another variation of an “ice-box” cake. Another alternative is to make all the layers with chocolate pudding (cooked not instant) and graham crackers - no chocolate ganache frosting. You want to ensure that the graham crackers are fairly closely placed together layer the chocolate pudding - 3 layers of crackers and top it off with a final layer of pudding. Fast, easy and good.

+Ralien mind its a good thing that egg whites freeze and defrost so well and stay in the fridge for so long. divide them by two or four so you have smaller batches of egg whites, put them in a zip lock bag and freeze them

my answer is different. in canada we have skim milk, 1% milk, 2% milk and whole milk (about 3.25%). the only difference is the amount of milk fat.

+rhea vania You don't have to use eggs at all to make a quick pudding. It won't be as thick or rich, but it's great nonetheless. I make vanilla pudding without the eggs and it's very creamy. Just stay with it. Look up cornstarch pudding for the exact measurements.

In Indonesia we dont have graham crackers. But we do have marie crackers. From where I see it, its the same as graham crackers but in rounded shape. Any Indonesian can tell the difference?

As another fellow Indonesian, I think the flavours of Marie or Regale Crackers are stronger (the vanilla) but your dessert will still turn out delicious. I think it is normal here to make pie/cookie crusts (cookie crumbs & melted butter packed together and baked) with Marie Crackers!!! Hope this helps!!!

it has pastry cream and chocolate so it's eclair-like, and probably tastes like an eclair, it just has graham crackers instead of choux pastry and looks different. Idk, I'd say if it's like anything, it's like an eclair.

+Gabrielle Festa If I make french fries using sweet potatoes, it'll be very good, but it won't be french fries. An éclair is indeed made with pâte à choux (choux pastry). There's also her crème pâtissière (pastry cream) which is actually a "crème madame". If you replace the two main ingredients of a classic dish, it has to be renamed. Not to forget the proportions, an éclair doesn't have that load of cream and chocolate. Again, I like what she did, I just refuse its name.

Adriana H the British term for corn flour is the same as American term for corn starch, but the Mexican term for corn flour is not the same as the other two.
