By soaking the fries it removes excess starch so they are crisper when fried. I soak mine in water . . .the Coke thing is a mystery

Sydney Australia. Coca Cola is a very expensive soft drink in Australia. Averaging around $2 Ltr. Soda water works just as well and is a bit cheaper.

What is the purpose of soaking the potatoes in cola? How does it taste? Not sure if you are insinuating that the cola acts as some sort of flavor enhancer, tenderizer, or what. Oh well. Have a wonderful rest of the year and a happy 2025!

I suspect the sugar simply crisps up a bit like caramel, more than without. I did the ribs-with-coke thing and the end result was just a bit of brown sugar-ish coating and pouring off liters of unusable liquid. Better to slow roast with some sugar basting and have interesting jus. Would a similar treatment happen by mixing any dry sugar with the starch?
