He doesn't open in Chinatown because the older Chinese generation won't buy food like that. He's attracting the younger Chinese crowd and non Chinese clientele.

^ true. I am that younger chinese crowd and I love his food. My parents don't enjoy this though. It is too greasy for the older generation. But us American born Chinese love this stuff.
