You wash the rice mainly to remove excess starch. The starch can give the rice a mushy texture. For some dishes the starch is desirable but not for that.

gyudon and oyakodon are 11/10 dish if made correctly, to make the right sauce mix 3 part soy sauce, 1part sake, 1part mirin and 2-3 teaspoon dashi powder if you don't have dashi you can substitute with with beef or chicken stock/bouillon and pinch of salt and add a bit of msg to reach the gateway to heaven. P.S if using dark sauce or temari soy sauce use less of it as it contains more sodium.

@Niyucuatro

traditionally rice was washed to remove those bug, small stones or branches. This had the unknown side effect of removing some of the extra starch. Nowadays, at least in 1st world countires, comercialised rice is quite clean, but it still has that extra starch arround. so cleaning it will get rid of it for those dishes that come out better without the extra starch. For other dishes you definitely want that starch and shouldn't wash the rice.

I love oyakodon--it's one of the first things I ever learned to cook and I've also survived on it, off and on, for years (it's pretty cheap to make and also healthy). You should probably use a little sugar, and I also like to add a small amount more soy sauce than the recipe usually calls for. I like to salt and pepper the chicken, because I think it's a bit bland if you don't. It's really good with shichimi togarashi sprinkled on it and some Japanese pickles of some kind. It's not traditional and a little heretical probably, but I like to use kimchi in place of japanese pickles and I think it's a really tasty substitute. If you do that stuff (or stuff like that that you would find tasty), then it definitely elevates the dish into something pretty flavorful while still being super comforting. Dunno who I'm typing this to--I guess to anyone who wants to make this dish and also has the patience to read my long ass comment.

If you want something healthier than white rice, make multigrain rice. Pearl barley, milet, brown rice, or quinoa. I like pre-soaked azuki beans, sometimes pre-soaked split peas work. Add a spoonful of black rice and it'll turn your normal boring rice purple. That sort of thing. Eating rice with beans make a complete protein, and that has to be healthy.

My latest favourite thing to cook rice with is oyster sause Mix it in the water you cook your rice in and it gives the perfect umami flavour. I also add chopped carrots right there to get it cooked alongside rice. Idk sounds like a struggle meal i guess but it is my favourite lately

I remember where I was when I learned what Oyakodon was too - I thought it was hilarious. I've since made variations of it at home and it's got to be one of my favorite things. One thing I do differently and I recommend you try is pre-cooking the onions in a combination of mirin and soy sauce. They will absorb ALL of that sauce and then add in your protein and more sauce. :) The onions become ascendant - honestly they could be their own main act. I bet you could add some MSG too to taste.

Thin slicing beef with kitchen knife requires beef to be half iced. Take the meat out from the freezer and let it sit for a while. When it's soft enough to cut through but still hard enough to not moving around, you'll get the thin slice. Or just use baking soda to tenderize the meat and skip the freezing process.
