11:52 a reason to shred cheese yourself is that pre shredded cheese is coated in (usually) potato starch which, much like corn starch and other types of starch, acts as a thickening agent and moisture barrier if the pre-shredded cheese didn't have this all of the moisture would "sweat" off of it and it would get really gross. the potato starch isn't necessarily a downside to using pre-shredded cheese but its addition is something you should keep in mind when you're using it as it can have an effect on dishes you use it in and isn't suitable as an ingredient for some

Former deli employee, you should grate the cheese yourself because most (almost all) pre-shredded cheeses have anti-caking agents in them (mostly cellulose) which can interfere with the sauce emulsion.

You shred the cheese because the pre-shredded stuff has cellulose that stops it sticking together in the bag. That is why you have these clumps of cheese in your mac instead of a smooth sauce. I would also advise you to break down the (chic)turkey into its legs, wings, and whole chest before the dry brine. Then cook it on a wire rack inside of a baking tray (or a deeper pan if you really want the aromatics). This will give you a full around crisped skin as opposed to the soggy parts that would be on the under side in a whole bird cook.

Finally a place for me to share my dad's raw batter dessert recipe!!! it's delicious! it's just a modified version of a brazilian fried dough called Little rain cakes (bcs the little balls are supposed to resemble raindrops) Anyways!! 2 eggs 1 cup of milk 1 cup of sugar 2 1/2 cups of flour 1 tablespoon of baking powder a pinch of salt vanilla essence to taste * 1 table spoon of cinnamon and 3 of sugar to coat Mix all the ingredients together until homogeneous, heat up oil in a pan (a little deep, the cakes need to float) and spoon small quantities in, making little balls, fry one until golden brown, and check the first one, from there time them so that the center will not be fully cooked when you cook the rest. once out of the oil place them in a paper towel, once all of them are ready roll them in the cinnamon sugar coating and done! delicious little dough balls with raw batter center!! hope you enjoy if you do try it!

@@sirllamaiii9708 cellulose is just a long chain carbohydrate. sawdust contains cellulose since it's a large component of most plant life, but they aren't literally sprinkling sawdust on your cheese. as to it's use in cooking, idk man i've used pre-shredded stuff on homemade pizza and it's turned out great. could it have been a bit better if i shredded the cheese myself? maybe. whether or not the effort is worth it is up to you to decide.

It's cheap AF, it stops it from clumping, it's nontoxic, and they can write it as cellulose so people don't know that it's sawdust because otherwise they'd be turned away. Here is a recipe for medium rare magwinya (home dish from Botswana🇧🇼 Ingredients 2 cups all-purpose flour 2 teaspoons instant yeast 4 tablespoons white sugar 1/2 teaspoon salt 1 tablespoon vegetable oil (plus more for frying) 2 cups warm water Preparation In a large mixing bowl, combine the dry ingredients: flour, sugar, yeast, and salt. Mix well. Add the water and 1 tablespoon of vegetable oil and mix into a soft dough. Cover the mixture with a tea towel and allow to rise for about one hour. The dough should roughly double in size. Mix further and let the dough rest for 10 minutes. Heat a large pot of vegetable oil over a medium flame for deep frying. Test the temperature of the oil by dropping a little batter in. If it sizzles, you’re ready to start frying. With a tablespoon, add dollops of dough into the oil, using a second spoon to help push the dough down if necessary. Make sure you turn them frequently until golden brown. (In this case medium rare) Drain over paper towels and serve whilst they are warm.

nerd info for whoever cares: the idea of shredding your own cheese being better that buying preshredded is because the preshredded stuff is tossed in some sort of starch to prevent clumping together in the bag, but that also means the store bought stuff wont melt as well and make a more grainy sauce. Also shredding it yourself means the cheese wont be as oxidized and in theory will have more flavor but most people cant tell a difference and dont really care

I've had a rollercoaster of an academic career, if you can even call it that. I set out to gain a bachelor degree in anything money related, failed 2 degrees, managed to attempt another degree at a higher level, failed that and ended up in accounting. Somehow someway, this turned out to be the best fit for me. Don't let any of these rejections take you down, and don't let any future academic failures take you down. Who know what the future holds, give it all you got but go with the flow. That's what seemed to work for me at least.

Its not we microwave everything fuck working hours and hours to as you said have a turkey taste slightly better than normal. Why not spend 30 minutes air frying or microwaving everything and enjoy.

That red dot/white probe thing in the first turkey is actually just a probe to let you know when the turkey reached a safe temperature, it usually pops up when it's ready. Hope things will get better and if not 2025 is a sign for even better things

If you inject the cajun butter Before you cook it, it'll be much more moist. I stuff mine with baby potatoes, pearl onions, fresh herbs, an apple, and a lemon (both halved). It literally falls apart and is ALWAYS super moist and delicious!!!

Pre-shredded cheese has an anti caking dust on it. Makes melting recipes smoother when you get a block.

yeah all the extra starch or cellulose or whatever they use tends to get in the way of melting

My favorite wrapped asparagus dish is with bacon and red bell peppers. It’s FIRE 😉. Brush it with garlic butter mid way through though.

You actually don't have to cook poultry to 165 F for the meat to be safe to eat. Check out Chris Young's safety video or ethan chlewboski's video on turkey to learn why 👍

As someone who is also in the application process, it truly does suck. There’s so much writing and correspondence that goes into it and my own personal struggles this year have made it very difficult and anxiety inducing for me too. It’s a universal struggle, and I hope that reading this comment and knowing I understand how you feel can help alleviate some of it; because that’s what the end of the video did for me.
