I think it depends on your skill level which track is the longest in MKW. At lower level I could imagine Rainbow Road goving a bit more trouble making it longer but as Rainbow Road become less of a roadblock, N64 Bowser’s Castle is actually longer by a couple seconds

I think as of Mario Kart 8 Deluxe, there are 4 different types of tracks now. Traditional closed loop, Segmented closed loop (N64 Rainbow Road), Point-to-Point track (Mount Wario and Big Blue), and changing layout (Tour Paris Promenade and Tour Tokyo Blur)

As long as it's a fun track I can like it. I agree with your statement of MK7"s being great but I completely disagree with you saying that MK64 has one of the best RR. I believe that it is the worst RR of any MK game due to its boring and tedious design. But you can have your own opinion, and so can I.

If we're going by the length of the track, and not by the total time taken to complete the track, Mount Wario is the longest course in Mario Kart 8. For Mario Kart Wii, I believe Maple Treeway is the longest course. Of course, as far as _official_ tracks go, the longest course in Mario Kart history (by the actual _length_ of the track) is Rainbow Road from Mario Kart 64. However, if you include the hundreds of custom tracks for Mario Kart Wii, the longest custom track is Volcanic Valley, which takes over 3 minutes to complete the single lap.... I'm not including Desert Bus for obvious reasons.

Why? It's incredibly boring. It takes 6 minutes to drive the full 3 laps, you can't fall off, There's almost nothing to do, and if you get hit by a chain chomp, it's really hard to get back ahead.

In other words, maybe around 1:20ish to finish one lap if you take the cut. Obviously, Divided tracks will be longer than 64 RR. Tho 64 RR still holds the record of longest traditional tracks.
