for the first advancement you need the piglin aggressive towards you then (you can't just throw the gold on the ground for this) you right click on the piglin with the gold, that'll give them the gold and you the advancement, the game doesn't detect the throwing the gold on the ground as you, so the game simply doesn't do anything about it

I think the reason you didn’t get the “oh shiny” advancement is because to get the advancement you have to anger the piglin and distract them with the gold, the piglins you gave gold weren’t aggro-ing on you.
