Let’s go ahead and get one thing out of the way. The filling for the Exchange Sandwich of 1918’s Economical Cookery does not look great. Still, before you rail against it, ask yourself how far off it is from the chopped Italian sandwiches that have been all the rage on social media the last few years? I think you’ll find, at least in concept, it’s not too far off. There’s no indication why the sandwich has the name that it does so yeah. Also, I could be wrong but my understanding is that food choppers of today (if you’ve watched Diners, Drive-ins, and Dives you know what one looks like) aren’t that far off from the food choppers of old. Except the olden tymee ones were hand cranked.

This seemed like a surprisingly complex sandwich for 1918. It seems like usually the sandwiches you have from this era are something along the lines of raw walnuts mixed with butter and sadness.

Looks good to me. My mom used to make sandwiches like that with one of those old hand-cranked choppers.

The classic ham salad was either chopped ham or ham put through a hand meat grinder. This is one example of modern tools not being the best solution. Might improve the color by adding some sweet paprika.

I love ham salad. I’d put everything through my old-fashioned hand grinder. The texture is better and I drain the vegetables so the salad isn’t soggy. (The onion and green pepper juice goes into a glass of tomato juice for a special treat.)

I'm not a fan of mayo at all but I appreciate all the different ways I've seen you incorporate it into sandwiches! I definitely think even just dicing the celery finely would add leagues to the texture department, otherwise I'd honestly eat this as is! Thanks for another great video!

My local butcher shop makes a pretty good ham salad spread. The only oddity, is they use the neon green pickle relish you would find on a chicago dog. So yeah, it gives off moldy vibe at least visually. I had to ask the butcher what exactly was going on in there. Lol

@@FishareFriendsNotFood972 so you take two slices if bread. Put mayonnaise on both sides. Slap them Beeches together. And you got your self a mayonnaise sammich. That was the struggle sandwich I didnt realise was a poor man's sandwich growing up. When my dad made them for my sister and I growing up, we just thought it was a cool snack. We didnt realise at the time we didnt have the money for any thing else. We were lucky if he had a slice of cheese in between them for us.

Dude thinks were making grilled cheese with mayo as the butter or some thing.... no two inner layers of mayo on any bread. My dads favorite was rye, but it was usually white bread. Slapped together. And if you have the extra money. A slice of cheese between the mayo.

Hand chop for a chunkier texture, top with American-style Swiss or Provolone, and broil until melty 👍

This looks like it would be pretty tasty .....sort of like a deviled ham/ham salad (love good deviled ham spread) with way too many veggies and not enough spice.....but still pretty good.

I think i would have kept the eggs out of the ham and veg paste, and added sliced hard boiled eggs as a separate layer.

I would do this sandwich in a minute. My only misgivings is the green bell pepper. Much as I love them, they do dominate the flavor spectrum of anything they are added to.

That's ham salad, bro. Add some good baloney to the mince, on some toasted white or rye, a slice a mater, some good mayo and some yellow mustard. That's is/was a Northeast lunch staple. Don't forget to cover that mater with black pepper.

Add a carrot to the initial ham mix and it's just plain deviled ham. So deviled ham with hard boiled egg and lettuce.

I can DEFINATELY see this one, especially using a chopper (or just a knife) but even as more of a paste I could DEFINATELY see this being amazing on some lightly toasted bread, maybe plussed up with some sliced tomato. Right before you added the sweet chili sauce I was thinking it'd go good with some sweet salad peppers, but since it's already got sour pickles in it that MIGHT have been too much so I think the chili sauce was a good call.

I’d have to add a small dollop more of mayo, hand chop the ham as fine as I could get it maybe even a small pinch of dry mustard. Also I love tobasco sauce

Day 20 of asking Barry to make the sandwich I submitted!~~ This sandwich looks good to be honest, even if the texture is a bit off. I think I would caramelize the onions. Cheers Barry!

Food processor is not going to give meat grinder texture. Hand chopping will be closer to what you’re looking for for sure.

Personally, I like more mayo mixed into sandwich spreads than you tend to use when no amounts are given. Makes me think maybe the proportions aren't right and the sandwich may be better than you initially think. Just an observation... for what it's worth. (2 cents!) LOL
