"...don't get the unsweetened kind." Gotta disagree. When I make applesauce at home, I don't sweeten it. The apple is already plenty sweet as it is.

I've been making and canning applesauce for many years and I've never added sugar, with the exception of cranberry applesauce. I usually use Gravensteins so it's quite tart. That's how I like it!

I have a wonderful recipe for homemade apple sauce using only apples and water, no sweetener of any kind. You don't have to peel the apples, but you have to use the right kind. I use Pink Lady, always easy to find. Additionally,, they give the applesauce a hint of pink-a big hit with my young granddaughter! Her favorite color is - you guessed it - pink! After cooking, you run the apples through a food mill-that's it! It is SO GOOD, especially when it's still warm.

Excellent report. I still remember cider in Quebec. The French knew their cider. I never used it cooking. It was a beverage. Lot's of applesauce in the kitchen. On the other hand, I don't eat apples.

Love your work, Jack!!! I think you missed apple jack, just one of the names. Simply put, one would put a mix of over ripened, bruised, and otherwise unstoreable apples into wooden cask, and just let it go until freezing weather. Tap the bottom once frozen for apple jack, then as soon as defrosted just a bit, draw the remaindering vinegar-like juice. Apple butter, well you need to dive a little bit deeper. Thanks a million!!!

I have access to non-pasturized apple cider from a local orchard who have been in business for many years. They process and immediately freeze their raw cider, and it's available all year long by the gallon. I know people will fuss about it being raw, but this farm has a picking and cleaning process that has produced a quality product that is safe and tasty for years. WE LOVE THIS CIDER! 🍎

I recently discovered boiled apple cider: it's an intense apple cider reduction that is shelf stable for long periods and lasts a long time in the fridge after opening as well. It's great to add to pan sauces or to make apple cider ice cream.

1:20 Hard cider's comeback isn't just from the last "couple of years." I started seeing cider coming back in the 1990s (this is more than 3 decades ago) with and it stayed steadily growing until about 15 years ago when large companies started producing and marketing them. Now the growth is even more rapid. And I disagree that sweetness is preferred- sweet cider is very (too) common and I wish there were more dry options.
@KenS1267
@KenS1267 13 күн бұрын
Mass market American ciders are just alcoholic apple juice. There are a few, very few, dry options. You basically have to go looking for craft ciders to get anything decent.
@ccbowers
@ccbowers 13 күн бұрын
@KenS1267 I agree. That's why I commented, because the sentiment he expressed in the video is the opposite of my feelings (seems like he wants alcoholic cafeteria apple juice). The mass produced stuff is mostly pretty mediocre. And I'm not opposed to the idea of mass production- I think beers have gotten to the point that decent stuff is widely available. But ciders are not there.
@JohnSmith-b4w
@JohnSmith-b4w 13 күн бұрын
Most ciders were too dry? What? It's hard to find a cider with less than 15 g of sugar in a 12 oz bottle, and some have a lot more than that. English ciders are much drier, which is a good thing, IMO.

When I was young, apple butter was still something of a regional food. My parents come from Pennsylvania Dutch country so we had a lot of that cuisine growing up, and it was I think the origin of apple butter in the US. Having given up alcohol 20 years ago, I do miss a good traditional cider and maybe applejack - but there's probably some Calvados around: neither cooking nor baking was not part of the deal I made, and I've never regretted that.

I am shocked and mortified that you advise against unsweetened apple sauce. Unsweetened apple sauce is delicious. Why sweeten something that nature already sweetened? It's a taste preference. To each, his own!

I only buy unsweetened applesauce, and then sweeten if necessary. And that's almost never. I also have no idea why you'd get the idea that having unknown amounts of sugar added to apple sauce would brighten the flavor. If I want to brighten the flavor of my applesauce, I add a few drops of lemon juice.

ATK needs to get real about the state of obesity and poor nutritional health in the world. Your ingredients are horrible. Apple Sauce is sweetened, by the apple.. An average apple has 19 grams of sugars such as fructose, sucrose and glucose. You only need to ruin a miracle fruit with refined white sugar if you have a sugar addiction and you dont really care about what you put in yourself...
