I learned how to make basic goat cheese when I lived in the country. You have to be super careful about using sterile equipment but it wasn't difficult and it was so satisfying to turn a gallon of milk into a nice round cheese.

My personal favorite is the Cypress Grove Chèvre Humboldt Fog, which they had here too, it's the one with the line of ash in the center, phenomenal cheese!

I adore goat cheese. I was raising the country on a small farm, but we did not have goats. They were sort of the “dirty animal” in our estimation. I grew up decided I wanted fresh milk, but didn’t have the ability to care of a cow so buy a couple of goats. The two goats grew into nine does and two bucks. Had I have had the finances and the room I probably would have an unlimited herd. Lol I fell crazy in love with them and bred them for their milk and their babies. I love their milk. I love their cheese,it’s just wonderful. Lol.

At a cheese shop in Paris, the guy asked us if we were feeling adventurous and well, of course we were! That goat cheese, I kid you not, smelled like paint thinner. The rind was so far beyond pungent. The creamy cheese inside tasted great comparatively, but we didn't rush out to buy more. I still love trying new cheese so I'll seek out some Bûcheron. Thanks ATK!

My favorite goat cheese is ekte geitost, a type of caramelized Scandinavian breakfast cheese. It’s so good thinly sliced on buttered toast.

The best goat cheese comes from artisanal heirloom goats raised in Mongolia by a small sect of blind nuns. Yes, I have to have it air-lifted to ensure freshness but it's a small price to pay for having the very best. I simply refuse to serve my guests anything less.

DID YOU KNOW - You can use pre shredded cheese for melting IF you rinse it well with cold water BEFORE you use it and then dry the cheese. The added cellulose or starch added will dissolve in the water. I dry it in a salad spinner.

A good quality cheese is not going to come in a shredded form, from a manufacturer, coated in anti-caking agents. This is also a messy. I've talked to people who've done it & they say never again. There's multiple tools now-a-days that make shredding your own cheese very easy & quick...& they don't make a mushy mess. There's also recipes you don't want any water to get into which means waiting for all that cheese to completely dry out on towels all over the counter. By the time you do all that you could have freshly shredded a lot of higher quality, better tasting cheese with no worries of anti-caking agents making it not melt well or going into your body.
