I go with Popper and Davis (Greger has the same stance as them)....I definitely believe in eating a lot of raw food daily, but even though I don't weigh much, I need a lot of calories and dense food, and raw food alone doesn't cut it for me to fulfill that....so I eat both raw and cooked...the best of both worlds! And the fact that Popper, Davis, Greger, Klaper, Barnard, Esselstyn, Campbell, etc, all are on board with cooked food (as well as raw) means a lot to me too...

Actually Greger has mentioned if you wanted to go raw to read and follow 'Becoming Raw: The Essential Guide to Raw Vegan Diets'. It's backed by scientific studies, much of which point to being nutritionally superior. (I'm not a raw vegan btw)

@d. d. welch That's not how any of this works. You have to publish so your results can be scrutinized and tested and retested. We don't take these things on faith or based on anecdotes. You make a claim, you publish it, and you have it checked out by your peers. This is how it always works. For any claim. You don't want it to work the way you say. Any approach can say "the results speak for themselves." Carnivore diet advocates say the same thing. It's sales talk. Sorry, but skepticism and scrutiny are very good things. Be wary of people avoiding them.

Not entirely, the reason why he might say under constant scrutiny is because anything that doesn't follow the scientific paradigm in a number of ways will not hold up to processes such as the peer review, for example scientists who may try to publish flaws and reexaminations of existing theories, will be unable to get by in peer review because it's meant to protect what they were taught and know.. and they have no way to accept something that defies that understanding lol. It's pretty essential to the evolutionary narrative that humans evolved from "Cooking food' or to many, eating cooked meat. So it's not hard to see how supporting a raw lifestyle would be heavily scrutinized and not supported by the scientific community. And people who are overly sensitive to following scientific facts and peer review, just want to play by the rules because they can at least PARTIALLY support their own bias by doing so. This may never give you the full truth though. So in that case, yes cooking food we're not meant to eat may make it easier to digest and extract more nutritional value. We only produce 2 enzymes that are meant for breaking down starch where starch eaters produce upwards from 8 different enzymes biologically. So of course the Okinawans cooked their sweet potatoes.

A raw food diet is a high nutrient, low calorie diet. Be prepared to eat a LOT of fruits and vegetables for energy and satiation. This is why foods like potatoes, rice, corn, beans and whole grains need to be the staple - because they contain more calories along with fiber, which helps with satiety. Nothing wrong with cooking vegetables. Will they lose some nutrition? Some will. However, most fruits and vegetables have already lost nutrition before they appear in your grocery store, doesn't mean we shouldn't eat them. Dr. Garth Davis says it all, "we're arguing minutiae".

It can’t be replicated by others or scrutinized for bias and misinterpretation of results and assumptions... which is the whole point of the scientific method. I don’t mean to counter what clement was saying about raw food. Hard to form a useful opinion on what he’s saying if his data isn’t peer reviewed and published.

Food is one aspect of health, but stress, happiness, relationships, job, etc all play a role in our health and longevity. I love raw foods, but some days I don’t feel like eating all raw. Also when I hear stories about the longest living people people, I haven’t yet heard one of them mention they were on a raw foods only diet. Most seem to have a positive attitude and clear mind and are just enjoying life. My great grandparents lived into their mid-90s but they ate home cooked meals with veggies meats and biscuits. Most from their garden, I think home cooked meals are even more important than raw or cooked or vegan. Also, my great grandparents didn’t have a car, they just walked everywhere.

Cooked food like grains are definitely a convenience but bottomline is you should have to eat a lot of fresh raw vegetables regardless. Adding some cooked starchy staples to supplement the vegetables is convenient and less expensive, and you dont have to spend as much time eating. The apes in wild spend all day eating whereas humans try not to and stomach size shrank because of cooking for so many eons. Its definitely not clear how much fresh vegetables and fruit is advantageous vs percent contribution from cooked starchy staples. I dont think anyone knows that answer but for sure you must eat fresh vegetables regardless.

How is this a problem? The enzymes are destroyed by saliva and don't make it to the stomach. A balanced diet is best, lots of vegetables, many fruits, a little meat, and the small amount left over can be filled up with rice and starchy vegetables.

In Nutrition.org by Dr Greger, he clearly states and proven by science that cooked foods are as nutritious as raw foods. Infact cooked vegetables are easier to digest than raw vegetables. I find Brian Clement arrogant, pompous, condecending and elitist. He actually said " maybe you don't understand" to a real Dr. He should be encouraging people to eat as much vegetables and fruits as possible, raw or cooked or non organic is irrelevant. Maybe he should be working as a car salesman or realtor instead?

I think you have to experiment with different diets yourself to see what works for you. I have found, over 6 years as a vegan, that the best diet is one with as much fruit as possible.

Yes I agree. First priority should be to get people to follow a plant-based diet including both cooked and raw foods. However acrylamide is a legitimate concern. It is a known carcinogen that forms during the cooking of starches such as potatoes and bread. So it is definitely beneficial to eat as many raw foods as possible, and as Dr. Davis said, they are just arguing about the tiny details. Obviously they both agree that a whole foods plant-based diet is front and center when it comes to health

All anyone needs to get a full understanding of what we should be eating for optimal health is to figure out that our digestive tracts are 98 percent identical to primates and they eat fruit. Secondly if we look at the contents of human mother's milk, we find that it contains less than 2 percent protein and in the first year of life a baby triples in size consuming that alone. So we can safely conclude that we DO NOT NEED THE LEVEL OF PROTEIN we've been brainwashed to think we do. Also in mother's milk we find lots of SUGAR. So the simple sugar in fruit need not be demonized the way it is. We need simple sugar to energize our cells. As much as we like eating like dogs and pigs who are true omnivores, we need to accept that our digestive tracts are NOT designed like theirs. Well I am quite new (a few months now) to a vegan/ whole foods plant based diet (still have small amounts of oil) and I have looked long and hard at what different people are saying and I don’t think fully raw is the right way to go, in Britain it is hard to get a good variety of fresh fruit and vegetables that are affordable all year round. So because there is not the variety of produce at an affordable price people will get fed up and drift back to their old way of eating. It is much better to have a wide variety of cooked and raw foods to give people the best chance of optimising their health and stay with a whole foods plant based diet! There is enough of a burden put on people trying to do the right thing and people like the guy on the left of the panel are extreme it has to be raw it has to be organic you should only eat amaranth or ancient grain, modern fruits contain too much sugar should only have ancient fruits, I mean the list goes on and on and on, I think he likes the sound of his own voice way too much and is rather condescending. I do think that having as much as possible raw is good but it is really good to have some cooked foods! I mean what about people who suffer from hypothyroidism, cauliflower/broccoli, kale and other raw veggies are goitrogens and are not good raw so will affect their thyroid function so better to have these very healthy veggies steamed than not to have them at all!

Peer review is probably the single most important part of the scientific method. Replication is necessary. I'm sorry, raw vs cooked foods is not minutiae. It is one of the most important and dividing discussion in the vegan community. I do respect these speakers, but they should not downplay the divide, one of many, that exists amongst vegans. I am a vegan and have watched and listened to hours and hours for a loong time of vegan experts' discussions and also vegan youtubers. The jury is still out on many issues. Lots of contradictory info. Lectins in your food? No problem, the body adapts. Vs Avoid lectins at all costs. Eat good solid grains. Vs Avoid highly hybridized grains such as wheat, oats, rye and barley (some of which now contain 80% gluten instead of 14-17% as Mother Nature intended). Vs Eat any and all grains, do not worry about the abnormally high gluten unless you have celiac disease. Etc etc. I could list pages of such contradictory info. Of all these discussions, the raw vs cooked debate could fill books. Definitely not minutiae.

Lj Thomas, great that your parents and grandparents lived long lives. But their situation is different than ours. The soils are very depleted of nutrients and also toxic because of pesticides. This also affects omnivores, not just those eating plants because obviously the animals people consume eat the low-nutrient foods of the earth. One has to eat about 25 apples today to get the same nutrition in one apple in the 50s for instance. Not being informed about what is going on with food these days is playing Russian roulette with one's health I think. Look at all the obesity, child cancers and child hormonal disruptions just to name a few. Plus all the other nutrition-related conditions that were few and far between 40-50 years ago. As they say since ancient times: death starts in the gut. All conditions, acute or chronic, start from a nutritional deficiency. Even many so-called genetic conditions turned out to be oftentimes mineral deficiencies. Personally I find that by being informed about nutrition, I can greatly improve it and also prevent disease for my family and I. And I do that even if I come myself from long-living, in their mid-nineties family members because the quality of their food was better than ours.

It's a mixture of both depending on the food cooking some foods helps make the nutrients more bioavailable whereas cooking some foods can destroy some of the nutrients but it varies how many nutrients based on the food and it's typically not that much. As far as producing heterocyclic amines and acrylamides I'm not sure I mean it seems logical that anytime you apply high temperatures to anything at changes their chemical makeup and structure and it definitely produces high amounts in certain foods when they are cooked such as proteinsso it's moderate for things like nuts and other higher protein foodsand it's extremely high for proteins that are animal-derived proteins such as muscle meat and fats.

The best thing about fruit is it is low in polyunsaturated fatty acids which have anti-metabolic effects in the body. Potato and rice are 2nd best for this reason, they are closest to the composition of fruit than most other cooked foods. RAY PEAT has written a lot about PUFAs in his articles.

I cant forget always I see Brian a rawfood interview with doug g and david w and brian was so heavy and he still a heavy person that we percieve still he havent healed that and that still scare/drive people out from all of his, I think that if it doest flows easily to you a rawdiet be it because of money time convenience availability preference taste etc just do the best you can and that involves real awareness of feeling good and being happy with what you do.

Some people and professional have their egos tied to their own limited experiences and vies. Science exists whether we are even capable of publishing or reading.the science of our ecosystems and many other micro or macro systems will still exist whether we investigate them. Raw, enzyme-rich food is of course most nutritious, cleansing and reparative. I’ve been a hygienic nutritional consultant with over 50 years as a naturopathic practitioner consuming a vegan diet , and for 24 years a raw, grain-free diet. I am in my 70’s, lived in Northern Ontario for over two decades, and am never, ever I’ll or dis-eased any,ore. A head-on collision 15 years ago caused a broken spine, crushed stomach, spleen, ribs and longs. Ted, eventually consumed a regular supply of raw, organic vegetable juices, then returned to a healthy state with not even one aspirin or surgery. A year and a half ago I fractured my hip, tore ligaments, went into shock for a while, fasted, and did almost nothing until I could eat pounds df grapefruit, avocados, sprouted nut butters and spirulina and sea vegetables. Again not one single drug or surgery. Last night I danced to live music for over two hours and am not sore today at all. There is a scientific explanation which I understand of course, but I have no need to use the scientific method and publish the experience of natural healing. I do not have to associate with argumentative, closed minded individuals or other practitioners. My own students and patients value their understanding and application of anatomical and physiological facts without having peer-reviewed or published verification of their experiences. They know what know regardless of another’s doubts, self-limiting indoctrinations, habits or preferences.

The doctor on the left is essentially correct. Acrylamide is a serious carcinogen that forms in cooked starches like potatoes and bread. That is why I eat as many raw foods as I can but I definitely still include many starches in my diet. The way I see it is that I could either consume carcinogens from meat or carcinogens from starches and I chose the lesser of the two evils

Kristopher Osborn it is true that acrylamides form in starchy foods. I learned it in my biochem class in university. Im doing my degree in nutrition. However, there are certain ways of cooking which promote acrylamide formation more than others (high temperature frying seems to form the most acrylamides) while steaming forms them less often. It is a legitimate concern but at the end of the day if you center yiur duet around fruuts and vegetables with starches supplementing it, you will be fine

It is so disheartening to people who want to follow a whole food plant based diet for health/ vegan diet for ethical reasons to have such a burden placed upon them by all this pompous nonsense! I feel the evidence put forth by the Dr on the very left of this panel is flawed! It is of course good to eat many things raw, fruits and of course many vegetables but also what the other Drs are saying has been scientifically shown to be correct that some things are better for our health when they are cooked. It is hard enough for people to afford a healthy whole foods plant based diet and stick to it without all this added burden that the Dr on the left of the panel seems to constantly insist on, it must be organic it must be ancient grain etc etc, he is supposed to be helping people eat healthy but instead many people are being put off by all his extreme viewpoint. All I would say to him is do not put impossible burdens on people that are not practical for people to afford or incorporate these extremes in their lives

Too bad people who haven't had good fruit completely dismiss it as "a snack" and claim it can not be the basis of the human diet."Oh you shouldn't eat fruit because it has too much sugar","Raw foods just aren't enough in a cold climate","Some foods are healthier cooked", etc. It's all just excuses for a past life of eating cooked foods. All these studies the "cooked" doctors are referencing are studying people who eat cooked vegan food instead of cooked animal flesh, which is obviously an improvement but it is in no way an argument against raw veganism, which hasn't really been studied extensively.
