Tradition matters.
And some places uphold tradition better than others, and go the extra mile.
Take Gemist, the popular white wine and sparkling wine drink in continental Croatia, for example. Can you tell your gemist from your skropec? And where does the Mussolini fit in?
In the first of an occasional series Exploring Zagreb, Singaporean wine legend Charine Tan joined me at traditional Zagreb eaterie Ficlek, for a guided tour by glass by manager Matej. A shorter version of this video with Croatian subtitles, is available here • Exploring Zagreb with ...

I remember even as a 12yo kid I was in my family vineyard helping my parents and grandparents pick grapes and every 30 - 45 min we would take a 5 min brake to refresh ourself and gramma would mix some vine and sparkling water from a cooler and when you are all sweaty and tired and its hot outside the Gemist hits just right it rehydrates you as its not just alcohol, it has a taste so not bland and its enjoyable and its not sweet like Coca-Cola so no aftertaste or constant craving for more from sugar also after a few brakes it kicks in a bit making the work easier This is the true power of Gemist. To all the wine enthusiast try drinking a glass of pure wine after doing a few hours of physical labor to see if you still like it.

The prosek with the eggyolk might sound weird, but it is sort of when Italians make zabaglione with marsala or some sweet wine, actually very delicious 😊

Grasevina is by far most underrated sort in Croatia. It is just a bit undertreated and this is why big majority of grasevina ends up as cheap, gemist- adequate product. When you step up a bit and try Galic or Krauthaker or Lukacevic or Rider (try and find that guy in Kutjevo, he sells wine from his own basement- it is worth every second of your research)- only then you can get the taste of what grasevina is supposed to be. It just needs to age a bit longer. The difference is day and night. There are many, many producers that do much better job with grasevina than Kutjevo vinery. Also, most people in Slavonija mix it with Lipicki Studenac (more acidic sparkling water produced in Lipik) for their gemist. And they swear this is the only water to mix it with their cheaper grasevina.

Having tried some rather dubious rakija over the years, I appreciate the sentiment, but cannot agree entirely
