It’s mainly bc u need to master the meringue. Make sure to mix comepletely to the point that it is very fluffy and there are no soft peaks (unable to hold shape easily). Then add the rest of ur sugar.

2 eggs, milk, flour, baking powder, sugar, cream of tartar, and maybe a little vanilla which is optional. You just gotta separate the white and place those in the fridge to cool while you mix up the 2 yolks with 1 1/4 cup milk, 1 1/2 cup flour, 2 teaspoon of baking powder, and a little vanilla extract if you wish. Then mix but don't over mix them. Take the cooled whites out of the fridge and whip into a meringue with sugar and cream of tartar. Mix ingredients slowly until all sugar is added and meringue creates stiff peaks. Where you could literally turn the bowl upside down and meringue stays in the bowl. You need to then add about 1/3 of meringue into pancake mixture which makes it lighter and easier to mix the rest. Adding the remaining of the meringue in while folding gently mixing together. This is important because if you mix too much or to rough the meringue will lose its airiness and fluffyness. At this point you should already have a electric gridle or pan heated up to about 300 F since the longer the mixture sits the less fluffy it will be (same with after cooking it). Add a little bit of oil to the pan but use a paper towel to remove excess oil. Then either use a pipet bag or scoop in the mixture high and thick for 3-5 minutes on each side and keep covered if you can to make sure it cooks through. And when you flip be extremely careful. Enjoy, it can be a bit of a pain and took me a few times to get a really good one.

Любые панкеки что вы делаете рецепт подойдёт только надо яйца взбить отдельно белок и желток желток добавляете к белку перемешиваем лопаткой и в кондитерскии мешок и выкладываешь на противень или сковородку.я делаю на сковороде.делаю очень часто приятного апетита
