1. I HIGHLY recommend a water rinse of the calcium citrate before proceeding to the next step. I skipped it and it made every succeeding step a little gross.

Absolutely! That or calcium hydroxide would work fine. Tbh the extra step with sodium hydroxide was really just for the visuals lol

I have a question but once I then get the citric acid in crystals (as you see in the final part) when it reaches room temperature doesn't it melt? and so then how do you make citric acid in crystals/veloid as there is commercially? do you have to cook it?

yes you could add calcium carbonate to nitric acid to produce calcium nitrate, water and carbon dioxide

This method is food safe as long as the final product is thoroughly rinsed and food grade sulfuric acid is used :)

Just plain water. The solubility of citric acid doesn't change much with increased temp in most organic solvents.
