Hi thank you for the video. Very much informative but not too complicated. I have a doubt: for the 40%abv vodka, just 40% of is alcohol right? So 60% is water. To what maximum temperature should I take the alcohol as to not evaporate water? I know water boiling point is 100C, but I've noticed while cooking that it evaporates also at lower temperatures... I want to extract oils from peppermint

Alcohol always boils off first. Heat the pot vessel slowly and keep the heat consistency right. You should have no issues with water contamination
