I am a typical Englishman, and I LOVE pie and mash. But coming from the North East, I am a stranger to liquor, but not averse to the idea. We normally had rich onion gravy with ours. I like parsley sauce with fish, but never had it with pie and mash. I also love Minced beef and crispy baked dumplings too, that was always a favourite for my family growing up. And mum used to make the lightest, fluffiest, crispiest dumplings. We have lots of traditional dishes that are considered to be bland, or stodge by many critics. But in my opinion, they are not bland at all, and they are also so satisfying, especially during winter months. And such dishes are what fuelled the empire, and industrial revolution, so there is a lot to be reversed about the humble English cuisine.

I was brought up on this stuff in South London. My favourite Pie and eel shop was Youngs of Brixton, sadly no longer there now. They made their liquor with the water that the eels were cooked in and it gave it a distinct taste that I have never had since. Always had a double pie and mash and my Nan had eels. The Vinegar was soused with hot red peppers which I still do today. It's just slightly better than Tripe and onions, another of my favourite dishes.
@bobdole7292 Жыл бұрын
So what is the liquor could you explain ?
@oldproji Жыл бұрын
@@bobdole7292Their liquor, (often referred to as green liquor), was a simple parsley sauce made from the water they stewed the eels in. It had a distinctive flavour that I haven't tasted anywhere else since. I have tried to replicate it using fish stock, but it just doesn't have the same edge. This food isn't at all complex. It consists of a ground beef and onion (minced beef) single serve pie; a portion of mash potato, and the parsley liquor. The other addition is a shake or two of malt vinegar that has had hot chili peppers steeped in it.

How awesome is this! I’m a Brummie, I first tried this London tradition of pie n mash at a P&M shop in Hastings, where Londoners go for a lot of day trips. It was without doubt one of the best things I’ve ever tasted! Next time I’m down the smoke I’m going to look up Mr Cooke’s shop.

blindsamurai102 Not really, since English food always beats American food & snacks on Eng vs USA KZbin videos. All I see is a bunch of Americans saying why they don’t have this food item in their country.
