I've been using salted black beans to make black bean sauce since I lived in Malaya when I was a child. I'm 64 yrs old now and for the first time I have seen how it is made from scratch. I'm truly thankful for you showing me how it was made as it is a flavour I enjoy. Since living in Malaya (it was called that when I was a child in the 1960's) I fell in love with asian food particularly Chinese food and I don't mean the Western Chinese food but the traditional stuff. My dad was in the Army and we had a Chinese amah who took me under her wing and showed me all sorts of ingredients and how they were cooked. When mum could not find me to come eat dinner she knew I was with the amah in her quarters trying delicious Chinese food lol. Mum reckons I returned to Australia half Chinese lolol. You bought back some wonderful memories. My pantry is varied and extensive and absolutely full of Chinese ingredients. Michelle

@@Realatmx When I went over there with my family as Dad was in the Australian Army it was Malaya then and that was in the 60's. Now it is Malaysia.

@@kimahmad332 I have always had a love for real Chinese food. I love to cook it and in Australia we have in NSW at least we have an area of the city of Sydney which is called ChinaTown and the food there is wonderful but I still class it as westernised Chinese food. The real thing is vastly different and that's the food I adore. You will probably find me more often in the Chinese supermarkets here than the normal western supermarkets. I have a very vast and varied pantry with lots of Asian ingredients, Italian, Greek, Indian, Middle Eastern and Mexican to name the main ones. In the Asian ingredients I have Korean, Japanese, Thai and Chinese mainly. Chinese and Korean are my favourites but I do love Udon and sushi and noodle bowls from Japan. Once I get started on talking about food I ramble lololol. Michelle
