In a measuring cup, add 4g of yeast, a spoonful of white sugar, and 200ml of warm water at 35 degrees Celsius. Stir until the mixture is uniform and the yeast is dissolved. Then add one room temperature egg white and mix until there are no lumps. The egg white makes the dough more chewy and tasty. In a large bowl, add 400g of flour and 2g of salt, and stir until evenly mixed. Gradually add the warm water mixture from the measuring cup to the flour, stirring continuously until the mixture becomes flaky. Knead the dough by hand until it forms a shape. Cover and let it rest for 2 minutes. Take another large bowl and brush it with some cooking oil. Open the lid, knead the dough again until it is smooth and fine; this should take about 3 minutes. Place the dough into the oiled bowl. Brush another layer of oil on top of the dough and cover with plastic wrap. After 10 minutes, the first rise of the dough should be successful. Knead the dough until smooth and cut into even portions, then knead and shape each. Coat each piece with some corn starch to prevent sticking. Arrange dough in a steamer and let it rise again until 1.5 times larger and feel light in hand. Turn on high heat, and steam for approx. 15 minutes, from when the water boils. After approx. 15 minutes, turn off the heat and keep the lid on for another 2-3 minutes. open the lid slowly to avoid sudden change of temperature. Voila, enjoy!
