很难想象清纯的绿茶也有妖艳的一面。加一点小苏打,一个碱性的环境,它会突破你对绿茶所有的认知,展现出妖娆艳丽的一面。绿茶这个形容词不是空穴来风,可能很多人并不知道粉红奶茶的存在,但是冥冥中会感受到特别清纯的表像下面一定会隐藏着截然不同的一面。
It's hard to imagine that pure green tea also has a seductive side. Add a little baking soda, create an alkaline environment, and it will break through all your preconceptions about green tea, revealing a charming and vivid side. The use of the term "green tea" when describing a young lady is not groundless. Many people may not be aware of the existence of pink milk tea, but deep down, they may feel that beneath the appearance of purity, there is a completely different side hidden.
粉色奶茶食谱:
茶底
水:3 杯
绿茶茶叶:3 大勺
绿豆蔻:6-8个,敲碎
桂皮:2-3 小段
八角:1个
小苏打:1/2 小勺
冰水:1 杯
粉红奶茶
牛奶:2 杯
10% 奶油:1 大勺
糖:1-2 小勺
茶底: 1-2 大勺
开心果,或者杏仁适量
Kashmiri tea / Noon chai ingredients
Tea base
Water: 3 cups
Green tea leaves: 3 tbsp
Green cardamon: 6-8 crushed
Cinnamon: 2-3 small sticks
Star anise: 1
Baking soda: 1/2 tsp
Ice water: 1 cup
Milk tea
Milk: 2 cups
10% cream: 1 tbsp
Sugar 1-2 tsp
Tea base: 1-2 tbsp
Crushed pistachios or almonds

回复总结: 1, 保存时间 冰箱里冷藏可以保存1-2个星期 2,为什么加冰水? 冰水是传统做法,为了给滚烫的茶水一个shock, 让颜色持久。效果不是很明显。一般室温水也可以。 3,为什么没有苦涩味? 苦涩味来自单宁酸。被小苏打中和了。 4,茶底颜色不够红? 我用不同的茶叶都煮过。茶叶本身决定了红色的深浅。喀什米尔茶叶颜色最红。普通绿茶煮出来的红色会暗淡一点,会带有一点棕色或者咖啡色。冲出来的奶茶都会带有一点粉色,而且味道没有区别。 Reply Summary: 1. Storage time? You can store it in the fridge for 1-2 weeks. 2. Why add ice water? Ice water is a traditional practice to give the hot tea a shock and make the color last longer. The effect is not very noticeable. Room temperature water can be used as well. 3. Why is there no bitterness? Bitterness comes from tannic acid, which is neutralized by baking soda. 4. The tea base color isn't red enough? I've tried boiling with different tea leaves. The tea leaves themselves determine the depth of the red color. Kashmiri tea leaves produce the reddest color. Regular green tea will result in a slightly dimmer red with a hint of brown or coffee color. Final milk tea will have a slight pinkish hue and no taste difference.

就是现在,我的茶汤正在锅里翻滚,红彤彤的。回放视频才发现,小苏打错放成了小半(大)勺。不知道味道是啥样哈哈哈哈

我用的普通绿茶包,两个,没拆开。煮了几分钟加了一勺苏打,发黄,有过几分钟没有变化,担心苏打不够又加半勺,又过几分钟,透过铁勺的映衬,底色有些发红,但舀出一小勺还是黄色。我大着胆子又加了一勺苏打,因为,光是看苏打沸腾的样子就感觉自己像在变魔法。哈哈,半小时后关火,还是老样子。没有小高姐的那么红,像是隔了夜的红茶。此时,我也不确定能不能喝了,三勺苏打。最终还是倒掉了。结论:我买到假茶叶了!

我用的老家普通绿茶。加入小苏打(大概是正常量的2-3倍吧)后变色非常快,最终颜色跟小高姐的差不多。而且我的小苏打已经过期好几个月了。问题可能真的出在你的茶叶上。@@chengchengyang2625

I was born in Kashmir ( Srinagar, the capital). After having lived in China for 8 years and having told so many people about this tea, i never expected to see a Chinese person to present it here.. It looks good.. Gonna ask mum to make it tomorrow as mine never comes out good.

when I had my first Kashmiri tea twenty years ago I fell in love with it since. But I don’t have a decent Kashmiri tea shop near me, and sometimes I was really frustrated by food coloured fake Kashmiri tea. Then I stared making the tea myself. I have make so many cups of the tea, and whoever tried it, fell in love with the tea just like I did two decades ago.

@@MagicIngredients I reckon it's a tough task but if you ever manage hold of them, do try Kashmiri bakery items. Kind of similar to Middle Eastern breads but centuries of isolation have created local versions. Even in other Indian cities, we have a tough time getting them.. And yes, Wazwan.

Много раз посмотрела это видео.И, наконец, решилась сегодня сварить этот чай.Кастрюльку берите по выше, у меня убежал, когда высыпала соду.Варила больше 30 минут, чтобы выпарился.Цвет получился коричневый.Ну я просто взяла 15 чайных пакетиков зелёного чая, видимо не очень качественный попался.Но когда приготовила с молоком, цвет напитка нежно розовый получился.Вкус интересный, ни на что не похожий.Думаю, попить на ночь.Вкусно, полезно и очень красиво!Обычно пью чай с лимоном и медом.Спасибо за рецепт.Всех Вам благ!❤❤❤😊

好像不是半小时+10分钟,是至少1小时+10分钟。前面说加了小苏打煮30分钟,然后扬汤再小火煮30分钟,直到3 cup变1 cup,感觉也许可能不止1小时?之后再加冰水煮10分钟

成功了!用了17個Costco的綠茶包,煮出來是褐色的。因為紅加綠是棕😂😂。如果要紅色比較明顯,大概要用茶色淡的茶。不曉得烏龍普洱之類的茶也會這麽香嗎? 感謝小高姐。你的食譜做出來的,都得到好評唷!

Being from Pakistan, I would not say Kashmir is part of us entirely, but rather should be an independent state, according to their wishes. Hopefully they will also be free from the oppression being faced by India who is trying to claim them. But we have many many Kashmiri people living in our country, and this pink tea is a staple in our winter time and for special occasions, like weddings and big events. I think it's lovely that this unique part of our culture has reached you and can be enjoyed by more people 😊🥰

Thank you SO much for this. The testing of different teas and different methods is so helpful. I am sure now I can make it at home with your help. Update: Just made it and it turned out PERFECT!!! I used jasmine green tea because thats the only thing I had but the color was as close as one can hope considering its not Kashmiri and the flavor was just phenomenal. It could not have tasted any better.

@@mangachanfan1556 I made it again and the color wasnt as nice 😢. I think because the tea has probably gotten stale (after months) so I would say maybe the fresher the better? or it could be due to the baking soda being older as well. I would just make sure everything is fresh to give it the best chance to work.

已经做完有香料和无香料两组并品尝完了,对比结果是香料组胜出🎉🎉我加了小高姐推荐的四款香料,白豆蔻(家里没有绿豆蔻)/八角/丁香/肉桂,香料组的尾调特别美妙~~而且我没有煮牛奶,直接冰箱拿出牛奶就混合喝也很棒~

What an interesting way to prepare chai. Never seen anything like this ; in Kashmeer, they infuse the tea and spices in boiling water, then directly mix with milk and sugar ; then filter it and pour it into a teapot. But your way of doing it seems interesting, to maximize the infusion. I may try it someday soon. Xie xie for the inspiration ;)

簡單的材料,經過化學變化,呈現異樣的高級感。雖然石榴綠茶的紅更剔透明亮,但粉紅奶茶在味覺和嗅覺上一定更增添一抹中東的神袐風味。謝謝小高姐。

@@zhoradao7035 聽說比起用現成的石榴汁,買新鮮石榴回來敲出果實壓汁會比較不澀。綠茶冷泡也可以減低澀味

@@MagicIngredients 啟稟小高姊,石榴綠或石榴紅茶是台灣泡沫茶飲時代(約40年前)的基本款調味茶。一般常見是綠茶 + 濃縮石榴汁 + 糖漿 + 一點檸檬汁 + 冰塊,在雪克杯中搖勻。要說美味絕對比不上這款粉紅奶茶。就是視覺上會呈現亮麗剔透的鮮紅~長得美罷了。說到粉紅色,同時期最出名的粉紅飲品叫「芬蘭汁」,其紅亦來自紅石榴。現在在台灣可能也得有點年紀的人才知道這玩意了。XD

@@zhoradao7035 會不會澀通常看綠茶本身和萃茶汁的方式。我個人覺得泡沫飲的綠茶不會用太好,但也就是帶著些許苦澀,才能在眾多調味上保有"綠茶"的特色。真正不澀的好茶還是原味才好品茗。^^

今年芭比粉正是火热的潮流,如今奶茶店这么内卷,竟然没有主打这种梦幻粉色奶茶的,都拿草莓火龙果之类的水果凑。不过这个煮茶底的过程比较耗费时间,跟港式茶餐厅做奶茶鸳鸯柠茶之类的过程类似
