I LOVE pilaf! You can cook it in many ways, leaving the main four (onion, carrot, rice, meat). Earlier, for example, my mom would add a garlic head in the middle (forgot which country cooks like that). We also use the drier version of raisins. I like to do the affordable version, since the cheapest meat here is the chicken and add the spice mix that is "for pilaf". It's a matter of taste, but I'm not a huge fan of eating plain rice, but when it comes to pilaf, I run.

i think with the garlic in the middle is the Uzbekistan version or at least from middle Asia. Pilaf is one of my five favorite dishes.
