All of the Italian dishes I used to have problems with are now perfection because I learned what I was doing wrong from Fabio. He is the only Chef I listen to when it comes to Italian food.

in video, no mention of bread flour to complete pizza dough but in recipe provided, 2 c bread/2 c ap. 1/4 c powder milk. not the same

Flour has starch and other carbohydrates, you don't need sugar neither in pizza, nor in bread. I do a lot of pizza and bake my own bread. I often use milk, but rarely if ever, sugar, unless it's a brioche. Lactose in milk is also a sugar. Why start the pizza on the stove if you put in the oven later. I cook pizza in the preheated oven at 500 550 F for 10-15 minutes depending on how big it is.

I do too. The only reason he started it on the stove is because of the skillet he used. Anyone else would put it in the oven to warm first as it takes some time for them to heat evenly. To me it looks too dry, a little more oil was required. He played too much to the camera, the pizza did not look that hot. When I use my cast iron for pizza, it is done in less than 10 minutes, any more than that then it's burnt offerings.

I just made this and I'm pretty sure the recipe attached is not accurate to what you did in the video. You didn't mention bread flour, only all purpose but that's what the recipe said. It still tasted OK and I'm very pleased with my first attempt but definitely adjustments need to be made. Also, PLEASE make a video on the sauces. I couldn't find your sauce in any other video.

Fabio's from Firenze I believe. However, every once in a while, Fabio's anti-southern bias comes out. 3:57 is one example. Subtle but it's there. I remember one time he was talking about pasta faggiolo and he was like, "It's not FAZUUUL." Just shows how Italy's differences are so vast from region to region.

Hot water would kill the yeast. Limit around 120F / 49C.

I like his style and his humor. I've been making pizza this way for years, in a cast iron skillet. But no salt? The crust will taste bland. And if you're going to add basil leaves, (whole leaves or a chiffonade) you should only put them onto the pizza about 1½ minute (at the most 2 minutes) before the pizza is done otherwise the basil leaves turn to that awful, dark green mush you see on his pizza. Using a short time, the leaves get cooked, briefly, and maintain the bright green color.

Topmost rack, highest possible temp, until the cheese melts (in my experience)

Just don't understand the music. Everything is rocking along, the kitchen looks great, the guy is smooth and cool and obviously knows a TON about food and cooking. Then the cartoon kazoo music starts and I can't concentrate on anything he is saying. Someone needs to ask the producer to STOP the kazoo music.
