I will try to remember to say how long it took. But honestly I often add sometimes up to 20 hours just because it is convenient.

I bought two spiral sliced hams for freeze drying. Great video... very helpful. I was concerned how well they would reconstitute. No worries about it now. Thanks!!!

I bought some spiral cut ham on sale and want to freeze dry slices and some of the non-spiral into chunks for soup. I just get anxious about fat. Thanks. Have a great day!!

Im drying some ham and the fat part on the rim isn't drying. Is it simply just add more dry time to remedy? Or is the ring of fat not going to dry?

You have to remove all the fat, I find it pretty easy to remove after I freeze dry it, as it is still soft and the meat is dry, pretty much pulls right off

so what is the verdict, slice all your meat for easy hydration, does sliced meat freeze dry better/faster ? have you tried slicing pork chop, or steak etc?

I like sliced meat so it really depends on what you want. I have done pork loin and roast beef both sliced and love the results
