In summer, creativity is given free rein in the kitchen and with a little imagination and color you can prepare simple, tasty and very scenic dishes.
This is the case with this "fake fish", very easy to prepare, with a truly captivating decoration.
Here is the shopping list:
Potatoes 700 g
Tuna in oil 200 g
Olive oil 50 ml
Pickles 175 g
Pitted olives 100 g
For the mayonnaise
2 egg yolks
Olive oil 200 ml
Salt to taste.
Juice of 1 squeezed lemon
For decoration
1 / kg of zucchini
Cherry tomatoes

Method
Boil the potatoes in their skins. let them cool, peel them and pass them through a potato masher.
Add the tuna drained from its oil (which I recover to give it to the ecological oasis of my city), then the pickles, olives and oil.
mayonnaise
Whisk the egg yolks by adding the olive oil slowly. When the mayonnaise is well whipped, I add a squeezed lemon and salt.
I arrange the potato mixture on a serving plate and shape the fish. Cover with a layer of mayonnaise and decorate with half rolls of boiled zucchini, pickles, olives and cherry tomatoes.
