I will use 1 cup of monk fruit and 1 cup of maple brown sugar to cut down on the sugar content. I will, also, substitute almond flour for the all purpose to cut down on carbs.

Be care using almond flour it doesn’t substitute white flour sometimes no add 1/4 cup of tapioca flour to the almond flour to correct the texture but you might be better off looking for a paleo pumpkin bread recipe and add monk fruit sweetener.

@@nancyfasolino7607 I usually add either a little arrowroot or tapioca flour as a stabilizer. Coconut flour is a good substitute but I can’t do coconut so it’s almond flour and a stabilizer for me. I have used it on numerous occasions for several years now. I actually do have a Keto Paleo Pumpkin bread recipe but I am always on the lookout for different variations.

That’s awesome that you have that experience playing around with the almond flour grain free blend. I’m always experimenting and I noticed your right the addition of coconut flour or cassava give a nicer texture. Enjoy let us know how it comes out!

Omg! I thought you were going to put the full loaf in the oven, good thing you read it was 2 loaves. I’ve done that before and it was quite the mess. Unfortunately I read the 2 loaves after baking it. 😅 Nice job putting it in the Bundt pan, looked scrumptious 😋!

Yeah I make pumpkin bread and I use 1/2 cup white sugar 1/2 cup brown. Sugar can always be adjusted to your sweetness preference.
