Good morning Julia. The 8 can taco soup sounds and looks so good. When my Mom passed away years ago,a lady that I had known all my life made taco soup and brought over here. It was so good. She brought cheese and tortilla chips to go with it. I never did get the recipe. I am writing yours down and going to the store and get the ingredients to fix yours. Ohh let me share my fav canned chicken recipe real quick! 3 large (10 oz) cans chicken 2 cans cream of chicken 1 cup Mayo (don’t worry you can’t taste it) 3 cups steamed broccoli (steam only for about 2-3 mins, frozen or fresh will work) 1-1 1/2 cups stuffing 1-2 cups cheese 1 tablespoon lemon juice Salt and pepper to taste Drain chicken and add to bowl, break up any large chunks Add in Mayo, cream of chicken, lemon juice, salt and pepper, and half your cheese. Mix to combine. Add in stuffing (this thickens it up and prevents it from getting soupy Add in half your broccoli and gently mix Pour into a greased baking dish Top with the rest of broccoli and cheese Bake at 350* til cheese is melted and golden and everything is hot

.... this sounds good.... what sort of stuffing ? Regular or chicken (?) And what kind of cheese (?).... I'm picky about cheese with chix. because the wrong cheese can " make or break " the final flavours.

@@texasstardust6010 we always use Pepperidge Farm Herb Seasoned Stuffing, but any stuffing should work. As for cheese, I usually use cheddar or cheddar Jack!

I made the Taco soup tonight and it was good and super easy! My husband really liked it as well and said the spicy level was just right. Black beans hurt my stomach so I replaced them with a can of white navy beans and also used the mild green enchilada sauce. I also added one more can of chicken, too. Thanks!

I have can chicken in my pantry but always end up using it as a topper for my dogs dry food. I just cant figure out how to use it where it is good to me. I've made something like the chicken roll-ups. I used pizza sauce, finely diced peperoni, mozzarella cheese, dash of Italian seasoning, red pepper flakes and rolled and baked like your chicken roll-ups. Made some warm pizza sauce for dipping. Anyway, I'll give a few of these recipes a try. Thanks for posting.
