Your nether tunnel to your base's portal reminds me of the dimensional transition from the "Lion, the Witch, and the Wardrobe". It might be really cool to have the entrance to your nether tunnel be a wardrobe. This theme also fits great with your mega base's snowy mountain biome.

For the Nether tunnel, soul lanterns feel like living snow, that blue look would be so cool floating around like trapped living snow, maybe some end rods might help too! Haven't legitimately beaten the Ender Dragon, and thus never flown with a Elytra. Haven't mined a single ancient debris. I have yet to tame an ocelot to get a cat. Though cats spawn in villages now? I forget about the off-hand constantly. Never used anything other than the standard arrows, but I use shields when I remember I can dual wield! I didn't know there were polar bears until last week! Always meant to clear a water temple one day, but never gotten around to it. I can't remember the new recipes for fences and fence gates. Haven't gotten around to exploring the Wild update yet And to top it off: I've never even brewed a potion! BUT! When there's new blocks added I like to find them and try to use them. When it comes to stairs think double helix - it allows you to access multiple areas vertically but with minimal loss of floor space. You can also have access to the same room from two different staircases at opposite ends of the room. You can't do that with a single spiral because you either have to cross the room to access it or you have it centrally which can divide the room even if you don't want it. You could really go all out and try for a triple or quadruple helix if you're a Masochist. 🤓
