Processed cheese has its place! I think I read this from Serious Eats - processed cheese is designed to melt without breaking (which is when you see the oil separate from the cheese). That's why it works so well on a burger or in a nacho cheese dip. Cheese soup/sauce recipes that use real shredded cheese will often have you start with a roux/bechamel, or have you add the cheese right at the end off the heat, to slowly coax the cheese into melting without breaking. And those are definitely good options, but using processed cheese does make it easier/more foolproof. Don't knock it, it has its place!

My favorite crockpot mac n cheese says to use a canned evaporated milk and a mix of processed cheese, cheddar and Parmesan cheese. The recipe says for the cheese to melt properly in the crockpot to NOT substitute the evaporated milk or leave out the processed American cheese. I would strongly suggest not subbing those ingredients because I think those are key to the consistency. You could probably use a combo of American and another cheese.
