When you pick it up and put it down in the exact same spot you're looking underneath it. to see how charred it is. U put it back in the same spot because it wasn't charred enough. and you move them around because the grill has different temperatures in different spots.

I have heard the opposite is correct. Turn the meat regularly to keep the juices in. Theory being it reaches the bottom of the meat and you flip before it drips, then it works it's way down again 🤷♂️
