MATERIAL:
-1 duck (Approximately 2.5 kg)
-2 bay leaves
-1 sprig of rosemary
-1/5 (One fifth) nutmeg
-5-6 black peppercorns
- Half a cup of (100 mL) apple cider vinegar
-1 teaspoon of rock salt
FOR THE SAUCE FOR THE DUCK:
-1 tablespoon tomato paste (Tomato-Pepper mix)
-2 tablespoons of yogurt
- The zest of half an orange
-Juice of half an orange
-1 clove of garlic
-1 teaspoon of paprika
-half (1/2) teaspoon of cumin, black pepper
-3 tablespoons of olive oil
-1 tablespoon of honey
FOR DRIED RICE
-3 cups (500 gr.) rice
-1 tablespoon of butter
-4 tablespoons of olive oil
-1 tablespoon of pine nuts
-2 tablespoons of almond kernels
-1 tablespoon of currants
-1 teaspoon of rock salt
-2 cups (400 mL) Boiling water
-2 cups (400 mL) duck broth (the water in which we boiled the duck)
