Hello Mark! Batchoy originated in Iloilo which is a 1-hour travel via fast craft jet from Bacolod port. Come visit Iloilo to taste the original Lapaz batchoy! :) My recommendations would be Popoy's (won the best batchoy competition here), Deco's or Ted's. :) Best batchoys usually can be found within the public markets.

Western Visayan cuisine is underrated. I am yet to taste Batchoy. I'm so entranced by the Piaya factory and l love that the people there are proud of their linguistic and culinary heritage. What makes La Paz batchoy quite different tasting from ramen is the added shrimp paste, bone marrow, chicharon, and liver in Batchoy. Batchoy is an umami bomb. But ramen has better noodle texture and an infinite variety of regional variation. Both are wonderful.
