Hey Neal. I finally had time to actually watch the video. And man I’m not one to correct anyone on their cooking. But bell peppers are not a Maryland thing. Being from Maryland it hurts to see crackers(fillers) get used, we hate that here. The more lump crab the better. Jimmy’s famous seafood uses no fillers. Not here to call you out or say anything negative but wanted to just say “we don’t put anything but crab meat and minimal filler/glue in the crab cakes here”. Again love all your videos and just passing information on. Keep up the awesome work.

I used to make eggs benedict with champagne mimosas for new years day every year. It was our little tradition and it was my wife's favorite breakfast. But crab cake eggs benedict? Wow. You must have had that at the White House because I know the Navy wasnt making food like that. Still, 16 oz of lump crab meat here in Ohio is too rich for my blood. Cant be cheap in Tennessee either. You must be rich! As much as I love seafood, I'm sure this would be my favorite too, if i could afford it. Anyway, it looked absolutely delicious. Keep on rockin it, you too. Love you guys!

Neal, I always say wow, that looks good, but this time I'll say WOW, that looks really really good. I've never been a big crab eater even living on the Coast of Maine, but that is going to change very quickly. I'll be getting some crab meat from a picker or a co-op and will be making this. Native Mainers only buy fresh crabs or lobsters right off the boat or at least from the market that gets fresh daily product. It will be just like your recipe, no poached egg just a fried egg.

My wife and her family are from B’More. I’ve been a couple of times. I’ve had some amazing crab and crab cakes there. Yours look really good sir. You’ve inspired me to finally try my own. The brand of Lump crab you got is actually a restaurant. I only see one issue with your cook, what are you doing with that little tiny thing of Old Bay. You shop at Costco. Get the big Old Bay container. I use Old Bay in a lot of stuff. Paprika on top of deviled eggs? Nope, not at my house, Old Bay on top of Deviled eggs. Goes well in Popcorn also.

I love pretty much all eggs Benedict types. This looked great. If I ever ( and I've been talking about doing it for a few years now) get to start making videos one of my favorite Benedicts is my Smoked salmon Benedict. I do a Pacific Northwest style smoked salmon that's somewhat different than what most folks see in the rest of the country. I'm curious what crab species was in that tub. Out here I'd get shot if I used anything but Dungeness, it's what we have. You mentioned that you thought you may have over cooked the cakes a bit. My suggestion is make the cakes a little thiner, not much. It's difficult to match the cooking time both inside and out when they are that thick. Last thing I liked your version of the hollandaise, nice touch. I like to use a immersion blender though. Great video, have a great day. 😊

@@TheFlatTopKing I picked up a container of lump crab this morning at Costco. Then I went looking for the recipe on your website and I struck out! Come on Amy!!! So here's what I believe you did. Neal's Crab Cakes: Pkg. Costco Lump Crab, drained and picked through for shells. Set aside and make the binder. 1/3 cup mayo 1 tsp worchestire sauce 1 1/2 tsp dijon mustard 1 tbsp lemon juice 1 egg 2 dashes cholula 1 cup, club crackers mostly pulverized salt and pepper to taste 1 tsp old bay Mix everything together (EXCEPT for the crab!), then gently fold in the crab being careful to not break up the crab lumps. Loosely pack the crab mixture into a ring mold. Gently press the cakes into panko breadcrumbs. Let the crab cakes set up in the refrigerator for 20 minutes or longer, then shallow fry in butter and avocado oil, browning the cakes on both sides about 3-4 minutes per side. Move to the cooler part of your flattop and continue cooking to an internal temperature of 145 degrees.
