If you've got some stale bread lying around and you're looking for something new to try out - Fannie Farmer's 1896 Milk Toast might be something you want to check out! In this video, I pick up Fannie Farmer's 1896 cookbook to get a little perspective on how one might have used stale bread in her day. Our obvious solutions would be french toast, bread pudding, even bread crumbs, but in 1896 Fannie had a different idea. With just a handful of cheap ingredients, Fannie elevates something that would have otherwise been thrown away. Join me as we try out Fannie's savoury solution to stale bread!

I remember my grandma saying milk toast was good for you when sick but she never made it that I remember. I was always confused and I could never imagine what milk toast actually is. Thank you for making it and clearing up that mystery for me!

The milk toast I had as a kid consisted of toasted white bread slices, with butter, sugar, and cinnamon on top, placed in an individual serving bowl, and then hot milk poured over it. The toast soaks up much of the milk and it's eaten with a spoon. Not savory at all--sort of a cousin to bread pudding, but without the custard component. The savory version you prepared could be the basis for any number of "a la king" versions by augmenting the white sauce with dried beef (for classic chipped beef on toast), chicken, salmon, canned tuna, sliced hard-boiled eggs, noodles, cooked veggies, etc. Fresh minced parsley is an always a nice addition to the sauce, too. Creamed-anything on toast has kind of passed from the scene as well, but it was total comfort food!

My mother gave us milquetost when we had “colds.”Add some good whiskey without the toast and it’s a killer hot toddy.

And here I always thought it was just warm milk poured on torn up pieces of warm toast, which was good the one time I tried it, with sugar sprinkled on top.

I'm curious about if adding cheese would have been a expensive add in , wouldn't the milk and butter also be a luxury for the hard times unless cheese production was a labor intensive process in 1890
