Here’s a simple butter chicken recipe:
Ingredients
For the Chicken Marinade:
500g boneless chicken, cut into pieces
1 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
For the Gravy:
2 tablespoons butter
1 tablespoon oil
1 large onion, finely chopped
2 teaspoons ginger-garlic paste
2 tomatoes, pureed
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon sugar (optional)
1 cup cream
Salt to taste
Fresh cilantro for garnish
Instructions
1. Marinate the Chicken:
In a bowl, mix yogurt, lemon juice, ginger-garlic paste, red chili powder, garam masala, and salt.
Add the chicken pieces and coat them well. Marinate for at least 1 hour (or overnight in the fridge).
2. Cook the Chicken:
Heat 1 tablespoon of butter and 1 tablespoon of oil in a pan over medium heat.
Add the marinated chicken and cook until it’s browned and cooked through. Remove and set aside.
3. Prepare the Gravy:
In the same pan, add the remaining butter. Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté for a minute.
Stir in the tomato puree, red chili powder, garam masala, and sugar. Cook until the oil separates from the mixture.
4. Combine:
Add the cooked chicken to the gravy. Mix well.
Pour in the cream and stir. Simmer for 5-10 minutes, adjusting salt to taste.
5. Serve:
Garnish with fresh cilantro. Serve hot with naan or rice.
