It seems to me that the jig is only used on the very coarse diamond stones, which do not contaminate. Once you have a flat bevel on a thick blade, sharpening freehand is very easy.

it looked like you used a soft wood (Douglas fir or maybe hemlock, it was hard to tell) for the jigs. is there a reason that you didn't use a hardwood instead?
