One of the questions I get asked all the time is how the heck to use all the garden produce we produce in the summer, so I wanted to share some of my quick, painless summer dinner ideas so you can cook your tomatoes, your basil, oregano, garlic, and other herbs, to use those delicious summer fruits and veggies before they spoil, even when you're busy. This 20 minute italian garden vegetable pasta is one of my favorite ways to use my ripe tomatoes and really enhance their flavor. Making good, authentic, homemade Italian tomato sauce from scratch is not as intimidating as it seems. People wonder what pasta to use, what tomatoes to use for their sauce, are worried the sauce takes too long to make, but really, all you need is a handful of whatever you've got on hand, two pots, and twenty minutes. Use these tips to make better pasta at home!
I know I'm always toeing the line between growing what we need and having time to harvest, prepare, cook and preserve it in the peak of the season so we can preserve these summer flavors for the winter months when the garden produce is less abundant. Because we all know that summer is one of the busiest times of year, and all the garden produce seems to be ready at the same time! Making delicious gourmet pasta doesn't take a degree in food science, it just takes a few garden ingredients and 20 minutes. These easy garden-fresh recipes will help you get quick gourmet dinners on the table in record time. Whether it's a weeknight dinner or you're trying to impress your guests, you can make these healthy and comforting meals using whatever ingredients you happen to have. Mom was Sicilian. She put a little red wine and a bit of sugar in the sauce.She used very little garlic. There are many variations of sauce. Italian cooking is mostly using whatever is available. Grandfather had an ulcer snd wouldn’t eat tomatoes. He ate pasta con ricotta every day for lunch. Very nice Frank

a staple dish is a pasta dish, so many ways to make a delicious meal, and adding garden fresh vegetables and farm fresh dairy makes it nutritious and filled with flavors, textures, aromas and soul satisfying pleasure. You took a 20 minute meal and then produced a symphony... Bravo, indeed!

I make an almost identical dish! Pasta is no longer on my "good" list but I still can serve it over other options, Quinoa is a decent sub, as are fresh zucchini "noodles" that are blanched for a few seconds then served al dente with the sauce on top! There are dozens of my recipes that are 30 minutes or less, they're great for those days when time is a real factor! Thanks so much for sharing this one!!

You've said before that you like your woodworking tools really sharp. You may want to apply that to your kitchen tools as well. The knife you used for the tomatoes may need some attention, the cleaver looks fine judging by the results. The end-result looks really tasty.

Hi Anne, with this new (eat healthy and no salt) brigade it is nice to see someone using salt in there cooking. I eat out a lot and nearly always have to add a load salt as it has not been used in the cooking. My girlfriend loves “McDonalds” I hate it but I have to sometimes get one as a compromise and again no salt, it is ruining food, it should have flavour and salt gives it flavour.

That dish looks SO delicious. The salt in the water also lowers the boiling point of water so it will boil a lil faster. Confession: I watched the look on your when you took the first bite a second time :-)

Salt **increases** the boiling point, but so slightly it isn't measurable at home.

When salt is added, it makes it harder for the water molecules to escape from the pot and enter the gas phase, which happens when water boils

Hi Anne, I season my pasta water too for that very reason but I use a lot more than salt. Also I had a little oil or butter to prevent my pasta from sticking to each other, :)

I think the butter/oil in the water is a myth, because oil and water don't mix, so it just makes oily water. But hey, who am I to argue with more butter in anything?

You're right it doesn't mix with water, it clings to the side of the spaghetti. To get the best affect, take a cooking fork, separate by twisting all parallel spaghetti apart and gently stir. Once you see them clearly separated you can turn away for other preparations cooking to pasta meets your desired texture. 😊💖

it was a gift and doesn't have a visible brand, but if you just look for a cleaver online or wherever you shop, I'm sure you can find one in whatever price range you're looking in, just make sure you keep it sharp ;)

It sure is! It's got a special story too, my dog that passed away last year chewed that stick when she was a puppy, so I carved it in her memory after she passed. It's become my very favorite spoon :)

That's how I like to cook. Work from experience and amuse what is on hand. I was surprised to see you use store bought butter, considering that you had cream and ricotta from your cow's milk 🤔🤔🤔😋

If you watch a few more of my cooking videos, you'll understand, I use so much butter I'd have to get 6 more cows to make my own butter for cooking. I do make my own butter, but it's only for spreading on things that are already cooked ;)

I wash my colander about once every 4-5 months. It's just a bit of starch that will flake off after drying. No need to wash every time. No health risks.

The butter still burns - even mixed with oil. It's the temperature that makes the difference. HOT tip, though. If you just use clarified butter, you're good to go. It's got a smoke point similar to olive oil. I even use it to pop popcorn (can't do that with plain butter).

I just skim it! With the goat milk, it’s a little tougher to skim without a separator, but cow milk is super easy.

I cook the same way; whatever I have fresh gets thrown in the pan and served with pasta. Dinner NEVER takes more than 25 min and everybody is happy with results.

I didn't realize KZbin had started adding mid-roll ads in my videos, I've removed them. I will say though that another perspective besides getting annoyed by the ads, is that KZbin, as a platform, has provided a small way to generate revenue for the creators spending untold hours and using their own financial resources creating these videos and uploading them for viewers like you to watch for free. I think it would surprise most folks to know that an average video takes me between 40 and 100 hours to create, costs about $1000 to make, and the ad revenue generally only amounts to about $60 per video.
💰 Don't leave MONEY on the Table! There's time for a side hustle.
