Farm to Table Sweet Potato

What to do with such a bountiful harvest of Sweet Potatoes but make my favorite recipe!

Ingredients:
sweet potatoes
olive oil
salt and pepper
butter
asiago cheese
Instructions:
Pre-heat oven to 400 degrees
cut the ends off of your potatoes and cut your potatoes so they are approximately even in size
rub (massage) your sweet potatoes with olive oil
place your sweet potatoes on a jelly roll or bar pan and add salt and pepper to taste
bake for 40 minutes or until fork tender
slice them down the middle without breaking the skin and add butter to taste
top with asiago cheese, spinach and more cheese

It’s called a butter bell. It has two parts. One that you put cold water in and the other you put the butter. You need to change the water daily but it keeps the butter nice and soft!
