I wonder how they taste? I've had deer and elk but never moose.

We hunted moose for years. The old bulls if they are rutted up can be pretty gamey. The young bulls before they start getting their paddles and are mature enough to rutt are very good. Not as good as elk but not as wild tasting as deer. I have always said you can’t eat the horns.
