Thanks for your patience everyone. Here is my first attempt at spatchcock chicken on my Lone Star Grillz offset smoker. I was quite impressed with how it turned out. The Lone Star Grill held temp like a champ.

What a great video. I really enjoyed this. Great attention to detail and I appreciate the time you spend setting up the lights, audio, and syncing all this camera. That chicken looks killer and that pot is a beast.

Try spritzing your chickens with butter spray throughout the cook! That butter cooks the skin while the chicken cooks. I did one last night.

Thank you very much Derek! I have dried out AND under cooked my fair share of chickens. Luckily the temp probes help keep me from doing that too much anymore :) .. Gatta love science.

Finishing the video-wondered if cooking the Uncle Chris one on the upper rack made a difference?? Just s thought.

The chicken looks great. I use some Canjun Blast Basting spray to help get the skin more crispy. I feel you would love one of Lonestar Insulated smokers. Keep up the great work!

A small part of my soul DIED when i saw you toss that chicken skin. Its the best part!!!! Also, the occasional flipping of the bird would help to crisp up the skin a bit more. Not sure how it works on your pit but on my offset, the heat tends to be towards the top of the pit.

LMAO... Maybe 10 years earlier and I would have gobbled up that skin... Every once and a while I will chew it and spit it out lol... It is sooooooo good. I will have to put a censored blur on the video next time lol.... Thanks for the tip FPS_Machete!

LOLZ! oh god that would be hilarious... little blurs on the screen covering the skin LOLOL! Oh, and another thing. The "Flip Method" was something i saw on Souther Coastal Cooking's channel. He did it on a brisket and it looked good so I tried it on my offset. Thats how i figured out that my pit keeps the heat on the roof. All this time i figured it would just shoot it across lol. That chicken looks awesome! I like to take out the breast bones and thigh bones and slice it up. That LSG looks great as well! Just ordered me one. Looking forward to the next cook!

E, I’ve been scoping out these grills for the better part of a year and I’m really itching to take a leap. What model did you go with and what sort of extras did you have done? Besides the custom trim.

I went with the 24 x 48 with 24 in vertical. I got the 1?2 in firebox upgrade. Got me a fire poker and the ash cleaner. I would have also added the ports to feed my temp gauge wires. I didnt do it because I didnt have the extra $$. But if I did I would for sure do that. Also I got the folding down shelf. This saves me a lot of room when I put it away. You will love it bud!

Hey John, I was thinking if I went smaller I might want the mini vertical. Looks like there is still a lot of space to cook, but might also be good for a quickie cook if needed.

The way you cut the first chicken breast was different from the second. Could have been why it was less juicy.
