Pit Master Heath Riles stopped by for this video to show me his secrets to winning rib competitions. Heath has won the Rib Team of the year in the Memphis BBQ Network for the past 4 years; (He’s well on his way to locking up a fifth title) so he knows a little something about cooking ribs. I’m thankful he’s willing to share his technique with us.
Heath cooks Heritage Farms Cheshire Pork in bbq competitions. This meat is known for its’ superior marbling and flavor. The ribs are given a quick trim to remove and excess fat or sinew and he pulls the membrane off the back. For KCBS contest Heath cooks 4-6 slabs of St. Louis cut ribs and for MBN contests he cooks 12 slabs of the loin back ribs which are a Memphis staple.
The ribs get a light coat of yellow mustard; then a generous layer of his Jalapeño Garlic seasoning; followed by medium layers of his signature Pecan and Honey Rubs. The same process is repeated on both sides, and he seasons the ribs about 20 minutes prior to going on the pit.
For this cook Heath used my Trager grill running at 275⁰ with a mixture of Hickory and Cherry pellets for smoke flavor. The ribs go on the grill for about 2- 2 ½ hours or until the rub adheres to the meat and then they’re wrapped.
In the wrap apply a light layer of Honey rub and lay the slab meat side down. Add a touch more Honey rub to the back side and ¾ cup of Heath’s Butter Bath mixture (it’s a powdered form of Brown Sugar, Butter, Honey, and other spices mixed with apple juice). Be sure to double wrap the ribs so the bones don’t poke through the foil.
The ribs go back on the pit for an hour to tenderize and Heath pulls them off the pit when the internal temperature reaches 204 - 208⁰.
He carefully takes the each slab out of the foil wrap and dust the back side with his Sweet Rub and light glaze (1 cup Sweet BBQ Sauce & ½ cup Tangy Vinegar). Then repeats the same process on the meat side.
The ribs go back on the pit for 15-20 minutes to set the glaze and then it’s time to serve them to the judges.
These ribs had a beautiful appearance and perfect texture, but the best part was the flavor.
The rub combination and tangy sweet glaze brought out the richness in the Cheshire Pork. I see why Heath is a rib champion!

I’ve spent $$$$ on a Michelin starred dinner experience on occasion- but in the end, nothing surpasses the satisfaction of barbecue perfection. Apples to oranges… I believe it’s easier to perfect world class ingredients, than to transform large “every day” cuts into something that is immensely satisfying and flavorful.

I followed these instructions and used a pit boss smoker for the cooking. Used similar timing and temperatures. I also used 3 layers of seasoning and a homemade glaze (honey, soy sauce, brown sugar, garlic). I took one bite and I swear to God I heard an eagle scream. I threw the rib outside and slapped the nearest person to me. Thank you for sharing secrets of the trade. Don't think I'll be making ribs any other way. The butter bath is like Jesus, it's the pathway to heaven, all you have to do is take it. Gave me candied meat vibes. Everyone at the cookout was beyond happy, no leftover.

I made these ribs today in my Pit boss vertical and followed the recipe as closely as possible. Although most of my family is vegan, I still have 2 daughters that tried them out along with my meat-eating buddy down the street. They were absolutely fantastic and I received rave reviews! I did however pass the credit along to Heath. Thanks for the awesome recipe and I will be ordering again soon.

Jeff this is not Texas bbq. When he says MBN that means Memphis bbq network. This guy is from Mississippi and he always cooks in the world championship Barbecue cooking contest at Memphis in May. Texas and Memphis bbq is not the same. Texas has good barbecue but it doesn’t compete with Memphis.

I would kill to eat some of that tbh, now I’m hungry. Reminds me of my grandpa, he loved making big platters of delicious steak and ribs when I was a kid, when we had tons of family over at his place for dinner. He was my kind of guy, friendly and kind, and he made sure I was never hungry. Unfortunately nobody was ever able to make them quite like he did.

Hello from Dallas, Malcolm! I have used your rotisserie chicken recipe and then cooked a 6-bone in pork loin with your recipes. I have gotten rave reviews. Everyone ate their loin down to the bone. I’m an ok cook, but you made me look like a pro! My husband built a full outdoor kitchen and I’m using it a lot. I’ve saved both of the recipes I’ve used. Oh! Accidentally, I came across a fantastic technique to make the best ribs I've ever eaten. I live in Houston but was in Mississippi cooking Q for the family and about 3/4's through it started pouring down rain and I had to pull all the meat off and afrte some hours of constant downpour, I covered everything and put it in the fridge. Next day I restarted my fire (Hichory and Pecan) and put everything back own to finish. Cooked as usual and wrapped with foil near end and took it off as it got done. Chicken and ribs in their time frame. Best damn Bar-B-Que ever!!! Family and friends went crazy with praise of best Q they had EVER eaten. Tested the technique a few more times on my next cooks, and lo and behold, the twice cook hands down ALWAYS come out with that magnificent taste. It is time consuming and bit more work, but you know the joy and satisfaction of the end product. I am not worthy of giving you an ounce of advice about Bar-B-Que whatsoever, but one day when you got the time, I urge you to give this a try. I call it my "Twice Q'd Que". I assume the meat pores closing down on that already infused meat and reopening with another infusion must be the trick. Whatever, it has never failed me yet and every time I can allocate the time, I double cook now. Even the chicken is more scrumptious and the ribs are just to die for. Just wanted to let you in on an accident that could possibly revolutionize the game. Sorry to bug you with this epilogue, have a good day and hope by chance you find this.

If you're just cooking for home, just pick a rub you really like and stick with that. Multiple rubs are for competitions and usually the flavor profile is lost on non-judges (wasted). :)
